It’s the 15th day of the first lunar month, Jeongwol Daeboreum (Great Full Moon). Even if it feels a bit tedious, try making this simple and nutritious Five-Grain Rice! You can use the grains you have at home and buy any missing ones. I went to a local market selling mixed grains and bought a small amount of foxtail millet and sorghum for just 2,000 won, enough for about a cup each. This recipe will show you how to easily make it in your electric rice cooker.
Ingredients- 1/2 cup red beans
- 1/2 cup sorghum
- 1/2 cup beans (e.g., black soybeans or peas)
- 1/2 cup foxtail millet
- 3 cups glutinous rice (sweet rice)
- 1/2 teaspoon salt
Cooking Instructions
Step 1
First, prepare the five grains that form the base of your O-Gok Bap. I’ve chosen glutinous rice, sorghum, foxtail millet, red beans, and regular beans. (You can use black soybeans, green soybeans, or peas for the beans, depending on your preference.)
Step 2
Wash 1/2 cup of red beans thoroughly. Place them in a pot, add water, and bring to a boil. Boil for a few minutes, then discard this first cooking water. This step helps remove any bitterness from the red beans.
Step 3
Rinse the parboiled red beans under running water again until clean, and then drain them.
Step 4
Now, wash 1/2 cup of beans, 1/2 cup of sorghum, and 1/2 cup of foxtail millet. Combine these with the drained red beans in a bowl and soak them in plenty of water for about 40 minutes. Soaking the grains well ensures a tender texture in the finished rice.
Step 5
Wash 3 cups of glutinous rice and drain it well in a colander. Removing excess moisture from the glutinous rice is important to prevent the final rice from becoming too mushy.
Step 6
Rinse the soaked red beans, beans, sorghum, and foxtail millet once more under running water and drain them thoroughly.
Step 7
Transfer all the prepared grains and soaked ingredients into the inner pot of your electric rice cooker. Add 1/2 teaspoon of salt. Lightly seasoning the glutinous rice will enhance the overall flavor of the O-Gok Bap.
Step 8
You have a total of 5 cups of grains. Refer to the water level markings inside your rice cooker pot for ‘glutinous rice’ or ‘mixed grains’ and add water accordingly. For glutinous rice dishes, it’s best to use slightly less water than for regular rice; too much water can result in a sticky, ‘rice cake’ like texture. Once the water level is adjusted, press the ‘Cook’ button and wait for your delicious O-Gok Bap to be ready.
Step 9
Once the cooking cycle is complete, gently fluff and mix the O-Gok Bap with a rice paddle. This ensures that the flavors are evenly distributed throughout the rice, making every bite delightful.
