- 1 Ripe Banana
- 3 Eggs
- 3 Tbsp Unsalted Butter
- 1/2 Tbsp Granulated Sugar
- Sweetened Condensed Milk, to drizzle
Cooking Instructions
Step 1
Roti, known as Thailand’s sweet pancake, is a delightful street food! With just tortillas, bananas, butter, eggs, and sweet figs, you can easily create this fantastic snack at home. It’s perfect for kids’ snacks or a satisfying treat when hunger strikes.
Step 2
Begin by washing the figs thoroughly. Trim off the stem ends and cut each fig into quarters or sixths, creating appealing bite-sized pieces. Avoid cutting them too thin to maintain a pleasant texture. Peel the banana and slice it into rounds about 0.5 cm thick.
Step 3
Heat a large non-stick pan over medium-low heat. Melt 1 tablespoon of butter and add a splash of cooking oil, swirling to coat the entire pan. This prevents the roti from sticking and helps it achieve a crispy texture. Be careful not to let the butter burn.
Step 4
Place one tortilla in the heated pan. Toast it lightly on both sides for about 10-15 seconds until it’s just beginning to turn golden. Be careful not to overcook, as this can make the tortilla tough.
Step 5
Flip the tortilla. Pour about one-third of the whisked egg mixture evenly over the surface. Immediately arrange the sliced bananas and fig pieces on top of the egg wash. (Mixing the figs and bananas before placing them adds a wonderful synergy of flavors and sweetness.)
Step 6
Now it’s time to fold the roti. Fold the bottom and top edges of the tortilla towards the center to create a semi-circle, then fold in the side edges to form a neat rectangular packet. This ensures the filling stays securely inside.
Step 7
Carefully flip the folded roti and place it back into the pan with the remaining butter. Cook over low heat, flipping occasionally, until both sides are golden brown and crispy. This ensures the inside is cooked through and the exterior is perfectly crunchy. Cut into 2-3 portions for easy eating.
Step 8
For an extra touch of sweetness, sprinkle a little granulated sugar over the cooked roti, if desired. This adds another layer of delightful flavor. (Optional)
Step 9
Finally, drizzle sweetened condensed milk generously over the roti in a zig-zag pattern. The creamy sweetness of the condensed milk enhances the overall richness of the dessert.
Step 10
Your delicious Fig and Banana Roti is ready! Serve immediately while warm for the ultimate experience of crispy exterior and soft, warm interior. Make it for a special occasion, as a delightful kid’s treat, or for a sweet afternoon indulgence!
