  • 3 Fresh Figs
  • 100g Beef Ribeye
  • 10g Mini King Oyster Mushrooms
  • 10g Garlic (thinly sliced)
  • 30g Bell Peppers (cut into bite-sized pieces)
  • 40g Potatoes
  • 30g Sweet Potatoes
  • 40g Pineapple
  • 10g Baby Leaf Greens
  • 1 Orange (for juice or garnish)
  • 20g Pollack Roe (Mentaiko)
  • 2g Edible Flowers (for garnish)
  • 2g Parsley (chopped or for garnish)

Ama-Mayo Potato Sauce & Seasoning

  • 30g Olive Oil
  • 500g Cooking Oil (for frying)
  • 5g Salt
  • 5g Black Pepper
  • 2g Cornstarch (optional, for thickening)
  • 10g Mayonnaise
  • 10g Balsamic Reduction
  • 20g Heavy Cream
  • 2g Nutmeg Powder

Cooking Instructions

Step 1

First, gently dry the fresh figs. Wash them thoroughly, then lightly air-dry them to remove excess moisture. This step helps to concentrate their natural sweetness and achieve a delightful chewy texture when cooked.

Step 1

Step 2

Cut the beef ribeye into bite-sized pieces, about 1.5cm (or about 0.6 inches). Prepare the mini king oyster mushrooms, garlic, bell peppers, and pineapple by cutting them into similarly sized pieces. Lightly toss each ingredient with a drizzle of olive oil, salt, and pepper. Letting them marinate briefly will enhance their individual flavors and add depth to the skewers.

Step 2

Step 3

Using a vegetable peeler, slice the sweet potatoes into very thin rounds. Shape these thin slices into a decorative form (like a swirl or a nest) and carefully fry them in cooking oil until golden brown and crispy. Once fried, remove them and drain on paper towels to absorb any excess oil.

Step 3

Step 4

Peel and boil the potatoes until they are very tender. Mash the cooked potatoes thoroughly. In a bowl, combine the mashed potatoes with heavy cream, mashed pollack roe, mayonnaise, and finely chopped parsley. Mix well until smooth and creamy. For an extra touch of sophistication, add a pinch of nutmeg powder. This creates the flavorful ‘Ama-Mayo Potato Sauce’.

Step 4

Step 5

Thread the marinated beef ribeye and the prepared vegetables onto skewers, alternating them for an appealing look. Heat a pan or grill with a little olive oil and cook the skewers until the beef is browned and the vegetables are tender-crisp. Set the cooked skewers aside.

Step 5

Step 6

Now for the plating! Arrange the crispy fried sweet potato crisps attractively on your serving plate. Drizzle with the rich balsamic reduction. Place a dollop of the creamy Ama-Mayo Potato Sauce alongside. Garnish with fresh baby leaf greens and delicate edible flowers for a beautiful presentation. Finally, artfully arrange the cooked beef ribeye skewers. Your exquisite skewer dish, a feast for both the eyes and the palate, is now complete! Enjoy your culinary creation.
