Main Ingredients- T-bone steak, 1.8kg (approx. 2 pieces)

Cooking Instructions
Step 1
I purchased two T-bone and L-bone steaks, totaling 1.8kg, from Costco for around $80. Dining on a steak of this caliber at a restaurant would easily cost close to $500 – a significant saving! If you don’t have access to Costco, consider reputable online retailers for quality cuts.
Step 2
Generously coat the T-bone steak evenly with the steak seasoning on all sides. Don’t worry if you only have salt and pepper; they are perfectly sufficient for a delicious steak! Ensuring an even seasoning is key to building flavor.
Step 3
For the best flavor and texture, I vacuum-sealed the steak and let it age in the refrigerator for one day. This process enhances tenderness and deepens the taste. If a vacuum sealer isn’t available, a good quality zip-top bag with the air pressed out will work effectively too.
Step 4
If you have a sous vide machine, set it to 58°C (136°F) for 2 hours. If not, preheat your oven to 100°C (212°F) and bake the steak for 1 hour. This gentle cooking method ensures the steak is cooked perfectly through to the center, remaining incredibly moist.
Step 5
Heat your pan over high heat until very hot, then add the 2 slices of butter.
