  • 2 sheets of sushi nori (choose sheets with clean edges)
  • 1.5 bowls of warm sushi rice (freshly cooked rice is best)
  • 1 packet of sushi vinegar seasoning (if unavailable, you can make your own by mixing 2 Tbsp rice vinegar, 1 Tbsp sugar, and 0.5 tsp salt)

Gently rinse the fresh sea urchin briefly in cold water (or skip rinsing if very fresh) and drain thoroughly on a sieve. Handle the sea urchin with care to preserve its fresh, delicate flavor.

In a bowl, combine 1.5 bowls of warm rice with 1 packet of sushi vinegar seasoning. Use a rice paddle to gently mix the seasoning into the rice, being careful not to mash the grains, to create sushi rice. If you don’t have a pre-made sushi vinegar seasoning, you can easily make your own by mixing 2 Tbsp rice vinegar, 1 Tbsp sugar, and 0.5 tsp salt. It’s okay if the sushi rice is slightly more seasoned, as it will balance the flavor of the sea urchin.

Form the seasoned sushi rice into bite-sized balls, about 3cm in diameter. Lightly wetting your hands will prevent the rice from sticking and make it easier to shape.

Cut the sushi nori sheets lengthwise into strips approximately 3cm wide. The rough side of the nori will be on the outside, so select sheets with a neatly aligned texture.

Place a molded ball of sushi rice onto one of the nori strips. Wrap the nori around the rice, rolling it to form a cylinder shape, like a ‘gunkan’ or warship. Ensure the nori is wrapped snugly around the rice and then shape it neatly. Lightly moisten the edge of the nori with water to seal it for a clean finish.
