We’re making crispy on the outside, tender on the inside fried flounder using tender domestic fillet, topped over rice with a sweet and savory special soy sauce and fresh vegetables for a delightful meal. It’s easy for anyone to follow with simple ingredients, and it’s perfect for a balanced intake of protein and vegetables, making it an excellent choice for healthy meal prep or a special treat. Main Ingredients- 1 bowl of warm rice
- 2 pieces of fresh flounder fillet (approx. 150-200g)
- 4 Tbsp cornstarch
- 1/2 onion
- 1 bell pepper
- 1/2 red chili pepper
Flounder Marinade Ingredients- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 Tbsp fresh lemon juice
Special Soy Sauce- 4 Tbsp soy sauce
- 1 Tbsp mirin (cooking wine)
- 2 Tbsp sugar
- 1 Tbsp corn syrup
- 1 Tbsp Worcestershire sauce
- 4 Tbsp water
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 Tbsp fresh lemon juice
Special Soy Sauce- 4 Tbsp soy sauce
- 1 Tbsp mirin (cooking wine)
- 2 Tbsp sugar
- 1 Tbsp corn syrup
- 1 Tbsp Worcestershire sauce
- 4 Tbsp water
Cooking Instructions
Step 1
First, prepare the fresh vegetables for the rice bowl. Peel the onion and thinly slice it into strips about 0.5 cm thick.
Step 2
Remove the seeds from the bell pepper, cut it in half, and then slice it into strips similar in thickness to the onion, making it easy to eat.
Step 3
Remove the stem from the red chili pepper and rinse it thoroughly under running water. Remove the seeds and mince it very finely to add flavor to the sauce. Your vegetable prep is now complete.

Now, it’s time to prepare the main ingredient, the flounder. Use paper towels to thoroughly pat dry any moisture remaining on the flounder fillets. Removing moisture well ensures the coating adheres properly and fries up crispier.

Sprinkle 1/2 teaspoon of salt evenly over the dried flounder pieces for a light seasoning. A bit of salt will make it even more delicious.

Also, sprinkle 1/2 teaspoon of black pepper evenly on both sides of the flounder to eliminate any fishy smell and enhance its flavor.

Drizzle 1 tablespoon of fresh lemon juice evenly over the flounder. Lemon juice helps to remove any fishiness and makes the flesh even more tender. Let it marinate for about 10 minutes.

While the flounder is marinating, prepare the cornstarch. Lightly pat the marinated flounder dry, then coat it evenly on both sides with cornstarch to create a batter. Aim for a thin coating rather than a thick one.

Now, it’s time to fry the flounder. Heat enough cooking oil in a pan over medium heat. It’s efficient to start with a shallow amount of oil, fry the flounder until golden brown on both sides, and then add more oil midway through frying. This method helps conserve oil while achieving a crispy texture. Fry for about 10 minutes. (Tip: Instead of pouring a lot of oil initially, add more oil gradually during frying to save oil and get crispier results.)

Place the golden-brown fried flounder on paper towels to drain any excess oil and let it cool slightly. This will help maintain its crispy texture.

Next, let’s make the special soy sauce that will be the star of the flounder rice bowl. In a small bowl, measure and add 4 tablespoons of soy sauce.

Add 1 tablespoon of Worcestershire sauce for added depth of flavor.

Add 1 tablespoon of mirin (cooking wine) to bring sweetness and gloss.

Add 2 tablespoons of sugar, the key to its sweet taste.

Time to stir-fry the vegetables. Lightly oil a pan, add the thinly sliced onion and bell pepper, along with the minced red chili pepper. Stir-fry quickly over high heat for 2 minutes to keep the vegetables crisp.

Once the vegetables are lightly sautéed, pour in all the prepared special soy sauce.

After adding the soy sauce, reduce the heat to medium. Let the sauce simmer and meld with the vegetables for about 2 minutes to deepen the flavors.

Finally, place the fried flounder on top of the sauce. Simmer over medium heat for just 1 minute, allowing the bottom of the flounder to absorb some of the sauce. Be careful not to overcook, as the coating can become soggy. Turn off the heat after 1 minute.
