First, wash the eggplant thoroughly and slice it into rounds about 1cm thick. Sprinkle salt over the sliced eggplant and let it sit for about 10 minutes to draw out moisture. Gently pat the eggplant dry with a paper towel to remove excess water. This pre-seasoning step helps the eggplant absorb less oil and cook more tenderly. Heat 0.5 Tbsp of cooking oil in a pan and place the seasoned eggplant slices in it. Pan-fry them until golden brown on both sides. Be careful not to overcook them until they become mushy.

Transfer the nicely fried eggplant to a separate plate for now. This keeps them ready for mixing with the sauce later.

As the onions start to turn transparent, add the sauce ingredients: 2 Tbsp oyster sauce, 1 Tbsp mirin, and 0.3 Tbsp sugar. Stir well with the onions to ensure the sauce coats them evenly.
