Let’s make ‘Explosion Steamed Eggs’ packed with plenty of eggs, perfect as a main side dish. It’s substantial enough for a meal without rice. This dish is known for its incredibly fluffy texture and rich, satisfying flavor.
Main Ingredients- 7 large eggs
Seasoning and Aromatics- 90ml water
- 1/2 Tbsp salt
- 1 tsp sugar
- 1 Tbsp cooking wine (mirin or rice wine)
- 1 Tbsp chopped green onions
- 1 Tbsp sesame oil
- 90ml water
- 1/2 Tbsp salt
- 1 tsp sugar
- 1 Tbsp cooking wine (mirin or rice wine)
- 1 Tbsp chopped green onions
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Start by preparing your base. In a Korean earthenware pot (ttukbaegi) or a dedicated steamed egg pot, crack open 7 large eggs. The ttukbaegi is recommended for its excellent heat retention, ensuring a perfectly cooked result.
Step 2
Add 90ml of water to the cracked eggs. Then, incorporate 1/2 Tbsp of salt, 1 tsp of sugar, and 1 Tbsp of cooking wine. Using a whisk or chopsticks, gently mix these ingredients for about 2 minutes until well combined. A crucial tip: do not fill the pot more than 80% of its capacity. This allows the steamed egg to puff up beautifully without overflowing.
Step 3
Now, it’s time to cook the egg mixture over medium heat. Stir continuously in one direction for 3-4 minutes. As the mixture starts to thicken and form curds (‘monggeul monggeul’), increase the stirring speed to prevent it from sticking to the bottom and burning. Continuous stirring is key until it begins to set.
Step 4
Once the egg mixture has thickened to a pudding-like consistency, cover the pot with a lid. Reduce the heat to low and let it steam gently for about 2 minutes. During this steaming process, the egg mixture will puff up dramatically, resembling an ‘explosion’ or a fluffy cloud. Resist the urge to lift the lid during this stage.
Step 5
The final touch! After turning off the heat, garnish with 1 Tbsp of chopped green onions (optional, but adds freshness) and drizzle with 1 Tbsp of sesame oil. Your ‘Explosion Steamed Egg’ is now complete! Serve immediately for the best, most delicate texture.
