Enoki Mushroom Pork Bulgogi – Delicious & Kid-Friendly!
A perfect side dish for kids during their school break! This ‘Jeyuk Bokkeum’ (spicy stir-fried pork) is made by omitting disliked vegetables and focusing on the wonderful texture of enoki mushrooms. It’s a flavor explosion that your children will love!
Main Ingredients- Pork (shoulder or bulgogi cut) 600g
- 1 bunch Enoki Mushrooms
Spicy & Sweet Sauce- 4-5 Tbsp Pre-made Spicy Galbi Sauce (adjust for spice level)
- 1-2 Tbsp Soy Sauce
- 1 tsp Minced Garlic
- A pinch of Black Pepper Powder
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 2 Tbsp Cooking Sake (or Mirin)
- A little Sesame Oil
- A little Toasted Sesame Seeds
- 4-5 Tbsp Pre-made Spicy Galbi Sauce (adjust for spice level)
- 1-2 Tbsp Soy Sauce
- 1 tsp Minced Garlic
- A pinch of Black Pepper Powder
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 2 Tbsp Cooking Sake (or Mirin)
- A little Sesame Oil
- A little Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare 600g of pork, such as shoulder or a cut specifically for bulgogi. If you prefer a milder flavor or are cooking for children, you can substitute the pre-made spicy galbi sauce with a regular pork bulgogi sauce. Adjust the amount of sauce according to your taste preference.
Step 2
In a bowl, combine the pork with 1-2 Tbsp soy sauce, 1 tsp minced garlic, a pinch of black pepper powder, 1 Tbsp gochugaru, and 2 Tbsp cooking sake. Mix well with your hands until the seasoning is evenly distributed. Let it marinate for at least 20 to 30 minutes to allow the flavors to penetrate the meat. For best results, I often marinate it the night before and store it in the refrigerator. (Tip: Feel free to adjust or add other seasonings according to your personal preference.)
Step 3
Now, let’s prepare the enoki mushrooms. Trim off the base of the enoki mushroom bunch. Then, gently separate the mushrooms into bite-sized strands by hand. Tearing them into longer strands will help them absorb more sauce and provide a better texture.
Step 4
Heat a pan over high heat and add the marinated pork. Stir-fry quickly, using a spatula to separate the pieces and prevent them from sticking together. Ensure the pork is cooking evenly.
Step 5
When the pork is about halfway cooked, add the prepared enoki mushrooms to the pan and continue stir-frying. The moisture released from the enoki mushrooms will help prevent sticking, but if the pan seems too dry, you can add a tiny splash of water. Continue cooking until the pork is fully cooked through and the enoki mushrooms are tender.
Step 6
Finally, just before turning off the heat, drizzle a little sesame oil and sprinkle some toasted sesame seeds over the top. This adds a wonderful nutty aroma and completes this delicious Enoki Mushroom Pork Bulgogi. Enjoy it with a warm bowl of rice!
