Main Ingredients- 1 pack (150g) Enoki mushrooms
- 1 Tbsp Cooking oil
- 1/2 handful White part of green onion (approx. 20g)
- 2/3 Tbsp Soy sauce for soup (or anchovy extract)
- 1 Egg
Cooking Instructions
Step 1
Prepare your ingredients before you begin. Rinse 1 pack (150g) of enoki mushrooms lightly under running water and gently pat them dry. Finely chop about 20g of the white part of a green onion. Crack 1 egg into a small bowl and whisk it well. Measure out 2/3 Tbsp of soy sauce for soup or anchovy extract.
Step 2
Tear the enoki mushrooms into bite-sized pieces using your hands. Cutting them into 3 or 4 segments is usually good, but you can also cut them in half if you prefer. Avoid cutting them too small, as this can diminish their delightful chewy texture.
Step 3
Heat a pan over medium heat and add 1 Tbsp of cooking oil. Once the pan is warm, add the chopped white part of the green onion and stir-fry for about 30 seconds until fragrant. Be careful not to burn the green onions.
Step 4
Add the torn enoki mushrooms to the pan and stir-fry with the green onions for about 1 minute until they start to soften. Drizzle the 2/3 Tbsp of soy sauce or anchovy extract around the edges of the pan to season the mushrooms. This method helps infuse more flavor.
Step 5
Pour the whisked egg over the mushrooms and green onions. Let the egg start to set, then gently scramble it with a chopstick or spatula, mixing it with the mushrooms, and stir-fry for another minute until the egg is cooked through. Avoid overcooking, as the egg can become dry. This should take about 1 minute.
