Ingredients- 4 large eggs
- 1 bunch enoki mushrooms (trimmed)
- 40g chives
- 1 mini bell pepper (any color)
- Vegetable oil, for greasing
- 1 Tbsp cooking wine (mirin or sake)
- Pinch of salt (to taste)

Step 1
Let’s start by preparing the ingredients for a delicious enoki mushroom and egg roll. Using fresh ingredients will make it even tastier!

Finely chop the washed chives. Remove the seeds from the mini bell pepper and dice it finely. Trim the base of the enoki mushrooms and cut them into 2-3 cm lengths.

Crack the 4 eggs into a bowl. Remove the chalazae (the stringy bits) with a chopstick or fork. Add 1 tablespoon of cooking wine and a pinch of salt to taste. Whisk well until thoroughly combined. Add the chopped enoki mushrooms, chives, and bell pepper to the beaten egg mixture.
Step 4
Stir gently one more time to ensure the vegetables and mushrooms are evenly distributed throughout the egg mixture. This step helps to create a beautiful and uniform egg roll.

Heat a non-stick pan over medium-low heat. Lightly grease the pan with vegetable oil, then wipe with a paper towel to create a thin, even layer. Pour about one-third of the egg mixture into the pan, spreading it thinly. Once the edges start to set, carefully begin rolling it up from one end. Push the rolled egg to one side of the pan and pour another portion of the egg mixture into the empty space. Continue rolling the cooked portion over the new egg mixture. Repeat this process 2-3 times until all the egg mixture is used up and cooked through. This layering technique creates a thick and delicious egg roll.
Step 6
The freshly made egg roll is delicious right away, but letting it cool slightly before slicing will help maintain its shape and result in cleaner cuts. Slice into your desired thickness and enjoy!
