  • 2 medium-sized abalones
  • 1 1/2 cups glutinous rice, soaked
  • 2 Tbsp sesame oil
  • Over 500cc water (adjust to your preference)

First, prepare two medium-sized fresh abalones. Thoroughly scrub the abalones, including between the shell and the meat, using a toothbrush. Separate the abalone meat from the shell and remove the hard mouthparts. Set aside the abalone innards and blend them into a smooth paste using a blender. Chop the abalone meat into bite-sized pieces. Now, place a pot over low heat and add 2 tablespoons of sesame oil. Once the sesame oil is warm, add the chopped abalone meat and the blended innards. Stir and sauté them together, being careful not to burn, until fragrant. This step enhances the abalone’s rich flavor.

While the abalone is sautéing, have your pre-soaked glutinous rice ready (1 1/2 cups). Add the soaked glutinous rice to the pot with the sautéed abalone and stir-fry until the surface of the rice grains becomes slightly translucent. It’s best to adjust the water amount as you cook rather than sticking to a precise measurement initially, depending on the rice’s condition and your desired porridge consistency.

You can adjust the water volume based on the amount of rice, whether it was fully soaked, or if you simply prefer a thinner porridge.
