Ingredients- 2 medium carrots
- 1-2 egg yolks (adjust to taste)
- 5 Tbsp oligodang (Korean oligosaccharide syrup) or honey
- 3 Tbsp brown sugar
- 1 block cream cheese (approx. 100g)
- 30ml milk (for consistency adjustment)
Cooking Instructions
Step 1
First, peel the carrots and cut them into large pieces. Place them in a pot with plenty of water and boil for about 30 minutes until they become very tender. Once the carrots are fully cooked, drain them in a sieve and let them cool slightly. While the carrots are cooling, separate the egg yolks and set them aside. (Having the yolks ready makes the sauce-making process smoother!)
Step 2
Place the well-cooked carrots into a blender or food processor. Add 1 to 2 fresh egg yolks to the carrots. The egg yolks will add a rich creaminess and depth of flavor to the sauce.
Step 3
Next, add one block of soft cream cheese and 3 tablespoons of brown sugar. The cream cheese will contribute a wonderfully smooth and savory element to the sauce, while the brown sugar enhances the sweetness.

Check the consistency and add more milk if it’s too thick, until you reach a smooth, creamy texture. Aim for a slightly thick consistency that’s perfect for dipping rice cakes or spreading.

With all the ingredients ready, transfer them to a blender or food processor and blend until everything is completely smooth and well combined. Listen to the ‘whirr’ as the ingredients transform into a luscious carrot sauce. Blend a few more times to ensure there are no lumps and the texture is perfectly creamy.
