Ingredients
  • 1/2 zucchini, sliced into half-moons
  • 1/2 onion, thinly sliced
  • 1/2 Tbsp minced garlic
  • A small amount of carrot, julienned
  • 1 Tbsp brown rice oil or cooking oil
  • 1 Tbsp cooking wine (mirin) or water
  • 1-2 Tbsp low-sodium pollack roe (roe only, membrane removed, finely chopped)
  • 1 Tbsp perilla powder
  • A little sesame oil (for finishing)
  • A little toasted sesame seeds (for finishing)

Cooking Instructions

Step 1

First, heat 1 Tbsp of brown rice oil or cooking oil in a pan over medium-low heat. Add the sliced onion and 1/2 Tbsp of minced garlic, and stir-fry until the onion becomes translucent and fragrant. This step helps to enhance the overall flavor of the dish.

Step 2

Once the onion is softened, add the sliced zucchini and julienned carrot to the pan. Stir-fry them together for about 2-3 minutes until the zucchini is slightly tender and vibrant in color. Adding 1 Tbsp of cooking wine (mirin) or water at this stage helps to remove any unwanted odor from the zucchini and adds depth of flavor.

Step 3

When the vegetables are somewhat cooked, reduce the heat to low or temporarily turn off the heat, and cover the pan with a lid. Let it steam for about 1-2 minutes. This steaming process will make the zucchini even softer and allow all the flavors to meld together beautifully.

Step 4

Now, add 1-2 Tbsp of finely chopped, low-sodium pollack roe (with the membrane removed) to the pan. Gently stir-fry it with the vegetables, breaking up any clumps of roe with your spatula. Cook for about 1 more minute, ensuring the savory and umami-rich flavor of the pollack roe is evenly distributed among the vegetables.

Step 5

Once all the ingredients are well-stirred and cooked, turn off the heat. Finally, sprinkle in 1 Tbsp of perilla powder, a little sesame oil, and a sprinkle of toasted sesame seeds. The nutty flavor of the perilla powder combined with the aroma of sesame oil and seeds creates a rich and satisfying finish.
