Steamed Shrimp and Mussels- 700g cleaned and purged mussels
- 200g peeled and deveined shrimp
- 50g fennel bulb
- 50g carrot
- 2 shallots
- 2 cloves garlic
- 1 bay leaf
- 1 sprig of thyme
- 1/2 bunch fresh parsley
- 1 lemon
- 150ml dry white wine
- 2-3 tablespoons olive oil
- Salt to taste
- Freshly ground black pepper to taste
Cooking Instructions
Step 1
First, scrub the mussels thoroughly to remove any dirt or barnacles. Soak them in lightly salted water in a dark place for about 30 minutes to help them purge any sand or grit. For the shrimp, peel them and devein by making a shallow cut along the back to remove the dark intestinal tract. If using fresh shrimp, prepare them in the same way.
Step 2
Thinly slice the fennel bulb to release its subtle anise aroma. Dice the carrot and shallots into small, uniform cubes. Mince the garlic by first pressing it with the side of your knife to loosen it, then chopping finely. This helps the garlic distribute its flavor evenly.
Step 3
Heat 2-3 tablespoons of olive oil in a pot over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Add the prepared shrimp and season lightly with salt and pepper. Sauté until the shrimp turn pink and are fully cooked through. Once cooked, remove the shrimp from the pot and set aside on a plate.
Step 4
In the same pot, add the sliced fennel, diced carrots, and shallots. Season the vegetables lightly with salt and pepper. Sauté for about 5 minutes over medium-low heat until the vegetables are slightly softened and have a pleasant aroma, allowing their flavors to meld.
Step 5
Next, add the cleaned mussels to the pot. Season them with a pinch of salt and pepper. Pour in the 150ml of dry white wine; this will help deglaze the pot and add a wonderful depth of flavor while reducing any potential gaminess from the seafood. Stir gently to combine. Add the bay leaf and the sprig of thyme. Cover the pot with a lid and steam until all the mussel shells have opened, which typically takes about 5-7 minutes.
Step 6
While the mussels are steaming, finely chop the fresh parsley. Cut the lemon into wedges, making them easy to squeeze over the finished dish.
Step 7
