When there’s nothing much to cook and nothing particularly appealing at the supermarket, I rummaged through my fridge and found a can of Spam! That’s how I decided on today’s menu: Spam Sushi Rice Balls. Enjoy a flavorful dish made with simple ingredients.

Main Ingredients

  • 1 can Spam
  • 2 bowls of warm cooked rice
  • 3 Tbsp Sushi Vinegar (seasoned rice vinegar)
  • 2 sheets of Kimchi
  • 3 Tbsp Soy Sauce
  • 2 Tbsp Cooking Sake (Mirin)
  • 1 Tbsp Sugar
  • Wasabi (Japanese horseradish)
  • A little bit of Gim (seaweed)

Cooking Instructions

Step 1

First, cook the rice. Freshly cooked warm rice is crucial for the best sushi rice. If you’re out of rice, cook a fresh batch quickly.

While the rice is cooking, prepare the sushi vinegar (seasoned rice vinegar). If you have plenty of pre-made sushi vinegar at home, you can skip making it. For this recipe, we’ll season the rice with just the sushi vinegar. Add 3 tablespoons of sushi vinegar to the warm, freshly cooked rice and gently mix with a rice paddle, being careful not to mash the rice grains, to create sushi rice.

Wash the kimchi thoroughly to remove excess water, then finely chop it. The spiciness and crispiness of the kimchi will enhance the flavor of the Spam sushi.

Add the finely chopped kimchi to the prepared sushi rice in a bowl and mix well. Ensure the kimchi’s color is evenly distributed throughout the rice.

Now, it’s time to shape the sushi rice into round rice balls. Put on disposable gloves, take a portion of the seasoned rice, and gently roll it in your palms to form a ball. After forming the ball, place a small amount of wasabi sauce in the center. This will create Spam sushi with a delightful kick! Adjust the amount of wasabi according to your preference.

Slice the Spam into bite-sized pieces, similar in thickness to the rice balls, for example, into squares.

In a small pan, combine 3 tablespoons of soy sauce, 2 tablespoons of cooking sake, and 1 tablespoon of sugar. Stir well to create the Spam glaze sauce. Make sure the sugar is completely dissolved.

Place the sliced Spam in a heated pan and fry both sides until golden brown and slightly crispy. Once the Spam is nicely browned, pour the prepared glaze sauce over it. Let it simmer together until the sauce coats the Spam evenly and thickens slightly. Be mindful of the heat to prevent burning.

Finally, top the round Spam sushi rice balls with the delicious glazed Spam. Then, wrap a strip of cut Gim (seaweed) around the rice balls. Your Spam Sushi Rice Balls are now complete, looking as good as they taste!
