Smoked duck summer rolls are a perfect dish for entertaining guests! Main Ingredients- 250g Smoked Duck
- 1/2 Yellow Bell Pepper
- 1/2 Red Bell Pepper
- 1 Onion
- 1/2 Carrot
- 30g Bean Sprouts
- 20 sheets Rice Paper
- 20 Perilla Leaves (깻잎)
- 10 slices Pickled Radish Wrappers (무쌈)
- 1/2 Lemon
Cooking Instructions
Step 1
Peel the onion and slice it thinly. Soak the slices in cold water for about 5 minutes to remove any harshness. Drain thoroughly in a sieve to remove excess moisture, which helps prevent the rice paper from tearing.
Step 2
Gently wash each perilla leaf under running water and carefully pat them dry with paper towels or a clean cloth. Slice the pickled radish wrappers in half.
Step 3
Wash the red and yellow bell peppers and the carrot. Peel them and then julienne them into thin strips, about 0.2cm thick. Cutting them thinly is key for easy rolling.
Step 4
Heat a dry pan over high heat and stir-fry the smoked duck for about 2 minutes without adding any oil. The duck’s own fat will cook it. Transfer the cooked duck to a plate lined with paper towels to absorb excess grease. Be cautious, as the duck may splatter oil when cooking.
Step 5
Prepare a bowl of lukewarm water by mixing boiling water and cold water in a 1:2 ratio. This temperature should be perfect for softening the rice paper. Squeeze the juice of half a lemon into the water for a refreshing citrus aroma.
Step 6
Briefly dip one sheet of rice paper into the lukewarm water for about 10 seconds, then immediately remove it. Over-soaking will cause it to tear easily. Lay the softened rice paper flat on a clean surface. Arrange the ingredients in layers: perilla leaf, pickled radish wrapper, onion, carrot, smoked duck, red and yellow bell peppers, and finally bean sprouts. Fold in the sides of the rice paper, then roll it up tightly like a sushi roll, starting from the bottom. Remember to dip only one rice paper sheet at a time.
Step 7
Cut the finished summer rolls in half for easier serving. Arrange them attractively on a platter and serve with your choice of three dipping sauces, such as chili sauce, peanut sauce, or fish sauce, for a delightful meal.
