Main Ingredients- 1/4 onion
- 1/4 zucchini
- 1/2 yellow bell pepper
- 1/2 red bell pepper
- 1 clove garlic
- 8 shrimp
- 2/3 paper cup tomato sauce
- 5 black olives
- 4 slices baguette
Cooking Instructions
Step 1
First, prepare your vegetables. Dice the onion, zucchini, yellow bell pepper, and red bell pepper into approximately 0.5 cm cubes. Cutting the vegetables into uniform sizes ensures they cook evenly and look appealing.
Step 2
Thinly slice the black olives and prepare the garlic by slicing it thinly. Having all your ingredients prepped beforehand will make the cooking process much smoother.
Step 3
Heat 2 tablespoons of olive oil in a pan over medium heat. Add the sliced garlic and sauté until fragrant, about 1 minute. Be careful not to burn the garlic, as this will impart a bitter flavor.
Step 4
Once the garlic is fragrant, add the diced zucchini, onion, and bell peppers to the pan. Sauté over medium-low heat until the vegetables begin to soften slightly. Then, stir in the tomato sauce, sliced olives, and balsamic vinegar, and continue to cook. This will create a flavorful base with the sweetness of the vegetables, the tanginess of the tomato sauce, and the richness of the balsamic vinegar.
Step 5
Season the simmering Caponata with 1/2 tablespoon of sugar, a pinch of salt, and a pinch of pepper. Taste and adjust the seasonings as needed to suit your preference. Let it simmer for a little longer to allow all the flavors to meld together, and your delicious Caponata is ready.
Step 6
Now, let’s prepare the baguette. Slice the baguette into 1.5 to 2 cm thick pieces. You can toast them in a lightly oiled pan until golden brown on both sides, or bake them in a preheated oven at 180°C (350°F) for 5-7 minutes until crisp. A baguette that’s crispy on the outside and soft on the inside is a perfect companion to Caponata.
Step 7
Finally, it’s time to cook the shrimp. Lightly oil a pan over medium heat and add the prepared shrimp. Season lightly with salt and pepper. Cook the shrimp, stirring occasionally, until they turn pink and are cooked through, about 2-3 minutes. Avoid overcooking, as they can become tough.
Step 8
Assemble your dish by spreading a generous portion of warm Caponata onto each slice of toasted baguette. Arrange the cooked shrimp attractively on top. Finish with a dollop of cool, creamy sour cream. This beautiful presentation of Shrimp Caponata will surely impress and delight. Enjoy your elegant home party meal!
