I pondered ways to enjoy salmon more easily and affordably. This contemplation led me to create ‘Salmon Square Kimbap’! The name might sound unfamiliar, right? It’s a relatively simple way to prepare and enjoy salmon, making it perfect for any day you want a little treat. Let me guide you through this delightful recipe!

Main Ingredients

  • 1 bowl of warm cooked rice (approx. 200g)
  • 4 pieces of salmon fillet (about 1cm thick)
  • 1/2 medium onion
  • 1-2 stalks of green onion (optional)

Rice Seasoning Ingredients

  • 1 Tbsp rice vinegar
  • 1/2 Tbsp sugar

First, thinly slice half an onion. Soak the thinly sliced onion in cold water for about 10 minutes to remove its pungent flavor, making it wonderfully mild. Drain thoroughly before use.

In a bowl of warm cooked rice (about 1 cup), add the rice seasoning ingredients: 1 Tbsp rice vinegar and 1/2 Tbsp sugar. Gently mix with a spatula, being careful not to mash the rice grains. Seasoning the warm rice allows the flavors to meld beautifully.

Now, let’s prepare the salmon mayo sauce. In a separate bowl, combine 3 Tbsp mayonnaise, 1 Tbsp finely minced onion, 1 Tbsp lemon juice, 1/2 Tbsp honey, 1/3 Tbsp fresh wasabi paste, and a pinch of black pepper. Whisk everything together until well combined. The wasabi adds a lovely kick that cuts through the richness of the salmon.

Time to assemble the kimbap! Lay a sheet of kimbap seaweed (gim) on a piece of plastic wrap. Spread half of the seasoned rice thinly over the seaweed. Arrange the 4 pieces of salmon fillet on top of the rice. Next, layer the drained sliced onion and a generous amount of the salmon mayo sauce over the salmon. Finally, cover everything with the remaining half of the seasoned rice. A tip for a neat square shape: don’t make the rice layers too thick.

This is a unique step for making square kimbap! Gently lift the plastic wrap to bring the four corners of the kimbap towards the center, carefully shaping it into a neat triangle. Press firmly to ensure the rice and fillings are compact and hold their shape.

Wrap the triangular kimbap tightly again with the plastic wrap to secure the shape. Now, slice the kimbap in half. Voilà! Your beautiful Salmon Square Kimbap is ready! A helpful tip for slicing: lightly dampen your knife with water to prevent the rice from sticking and achieve clean cuts. If using green onions, you can garnish the top or mince them and add them to the mayo sauce for extra flavor.
