Ingredients

  • Prosciutto or Bacon, 80g (cut into bite-sized pieces)
  • Parmesan Cheese, 60g (finely grated)
  • Linguine or Tagliatelle pasta, 250g
  • Unsweetened Whipping Cream, 200ml
  • Unsalted Butter, 60g
  • Nutmeg, 1 pinch (optional)
  • Salt (for seasoning, optional)
  • Black Pepper, 1 pinch (freshly ground preferred)

Cooking Instructions

Step 1

First, prepare the creamy sauce base. In a bowl, combine the unsweetened whipping cream (200ml) with a pinch of freshly ground black pepper and a pinch of nutmeg. Mix well. Since prosciutto is naturally salty, you can omit salt entirely or add just a tiny amount after tasting.

Step 1

Step 2

Now, let’s cook the pasta. Bring a large pot of water to a rolling boil. Add a pinch of salt to the boiling water, then add your linguine or tagliatelle (250g). Cook the pasta according to package directions, aiming for ‘al dente’ (slightly firm to the bite), usually 1-2 minutes less than the suggested time. Drain the cooked pasta well in a colander.

Step 2

Step 3

While the pasta is cooking, start building the sauce. Melt the unsalted butter (60g) in a pan over medium-low heat. Once melted, add the pre-cut prosciutto or bacon and sauté until slightly crisp and fragrant. Once the flavor of the prosciutto has infused the butter, turn off the heat and set the pan aside.

Step 3

Step 4

Turn the heat back on to low. Add the drained, cooked pasta directly to the pan with the prosciutto and melted butter. Toss the pasta gently to coat it evenly with the buttery prosciutto mixture. The starches released from the pasta will help thicken the sauce.

Step 4

Step 5

Pour all of the prepared cream mixture into the pan. Stir gently and continuously, or swirl the pan, to emulsify the butter and cream into a smooth, luscious sauce that coats the pasta beautifully. Keep the heat on low and allow it to simmer gently to achieve the desired consistency.

Step 5

Step 6

Finally, stir in the grated Parmesan cheese (60g). Mix until the cheese is melted and fully incorporated into the sauce, creating a rich and creamy finish. Serve immediately while hot. A sprinkle of chopped parsley can be a nice garnish if desired.
