Pork and Eggplant Rice Ingredients

  • 5 eggplants
  • 700g minced pork
  • A little green onion or scallion
  • Cooking oil, as needed
  • 3-4 Tbsp soy sauce (adjust to taste)
  • 1-2 Tbsp oyster sauce (adjust to taste)
  • 2-3 cups washed rice (adjust according to rice cooker capacity)

Wash the fresh eggplants thoroughly under running water. Once drained, cut them in half lengthwise and then slice them thinly on an angle, about 0.5cm thick. This slicing method enhances the texture when cooked with the rice.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Add chopped green onions or minced scallions and sauté gently over low heat to create fragrant green onion oil. Allowing the green onion aroma to infuse the oil thoroughly will yield a richer flavor.

Once the green onion oil is fragrant, add all the minced pork and stir-fry over high heat. It’s important to break up the pork and cook until it loses its pink color and turns a light brown, ensuring no clumps remain.

When the pork is almost cooked, add 3-4 tablespoons of soy sauce and 1-2 tablespoons of oyster sauce. Stir-fry to season the meat.
