I wanted to make my dad’s favorite salted pollack roe special, so I made this pollack roe rice bowl using steamed pollack roe! I was surprisingly delighted that my niece loved it even more! If you want to enjoy a special meal, let’s make it together!

Steamed Pollack Roe Ingredients

  • 2-3 fresh pollack roe sacs
  • 3-4 Tbsp perilla oil
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 cheongyang chili pepper (adjust to taste)
  • 1 tsp chopped green onion
  • Sesame seeds, to taste
  • 2 cloves garlic, minced (optional)

Rice Bowl Ingredients

  • 1.5 – 2 cups rice
  • 2 Tbsp perilla oil (or sesame oil)
  • 1 Tbsp tuna extract (fish sauce)
  • 250ml water

Cooking Instructions

Step 1

First, let’s prepare the rice for cooking. Rinse about 2 cups of rice thoroughly and then soak it in water for about 30 minutes. While not strictly necessary, soaking the rice beforehand helps reduce cooking time and makes the rice much softer! Before cooking, coat a cast iron pot or regular pot with 2-3 swirls of perilla oil. Then, add the soaked rice and stir-fry it gently to prevent sticking. Sautéing until the rice grains become slightly translucent and fluffy is key.

Once the rice is sautéed and has a nice fluffy texture, add 1 Tbsp of tuna extract for a savory depth of flavor. Next, pour in 250ml of water and bring it to a rolling boil over high heat. You want to see it bubbling vigorously.

As the water begins to boil and then starts to reduce slightly (after about 5 minutes), immediately turn the heat down to the lowest setting. Cover the pot tightly with a lid and let it steam for about 10-15 minutes, allowing the rice to cook through perfectly.

While the rice is steaming, we’ll prepare the delicious steamed pollack roe! Take the fresh pollack roe and either snip it into bite-sized pieces with scissors or slice it lengthwise down the middle. Then, gently scrape out the roe from the thin membrane. For those who are new to preparing pollack roe, using scissors to cut it is recommended, as it makes the process easier and helps the seasoning penetrate better.

Once the pollack roe is prepared, it’s time to season it. Finely chop the green onion, minced garlic, and cheongyang chili pepper, then mix them with the pollack roe. Add 1 Tbsp of red pepper flakes for a touch of heat and 3-4 Tbsp of perilla oil for a rich, nutty flavor. Mix everything together well.

Place the seasoned pollack roe in a steamer basket and steam it for about 4-5 minutes using a double boiler method. Once the pollack roe turns opaque white, remove it from the heat. Gently mash it with a spoon until it’s smooth and then sprinkle with sesame seeds to your liking. If steaming seems complicated, you can cover the bowl with plastic wrap, poke a few holes with a fork, and microwave it for 4-5 minutes. However, cooking times may vary depending on your microwave’s wattage, so check for doneness.

When the rice is almost done steaming, carefully arrange the prepared steamed pollack roe on top of the rice. Replace the lid and let it steam for another 2-3 minutes. This allows the savory flavor of the pollack roe to subtly infuse into the rice.

All steps are complete! Once the rice is ready, scoop the pollack roe rice bowl into serving bowls. If desired, sprinkle with shredded seaweed (gim) for an extra touch of flavor. Mix everything together well and enjoy your delicious pollack roe rice bowl!!
