Main Ingredients- 1 chicken breast (marinated store-bought recommended)
- 1/2 onion
- 1/2 pack enoki mushrooms
- 5 cloves garlic
- 1 head bok choy
Sauce & Seasoning- 350g store-bought tomato sauce
- 3 Tbsp milk
- Pinch of black pepper
- 350g store-bought tomato sauce
- 3 Tbsp milk
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare all your ingredients. Using marinated store-bought chicken breast will add extra flavor. Also get your enoki mushrooms, minced garlic, thoroughly washed bok choy, and finely chopped onion ready.
Step 2
Melt butter in a preheated pan, then add the marinated chicken breast. Sear it until golden brown on the outside and tender on the inside. The aroma will be absolutely delightful as it cooks!
Step 3
Once the chicken breast is about 80% cooked, cut it into bite-sized pieces with scissors for easier eating. Set the cooked chicken aside on a plate for now.
Step 4
In the same pan, add a drizzle of olive oil. Start by sautéing the chopped onion and minced garlic until fragrant. Once the onion becomes translucent, add the enoki mushrooms and the stems of the bok choy, and stir-fry them together.
Step 5
Return the cooked chicken breast to the pan. Pour in the 350g of store-bought tomato sauce and stir everything together until well combined.
Step 6
For a creamier texture and milder flavor, add 3 tablespoons of milk. Simmer gently, adjusting the sauce consistency. We haven’t added extra salt, but a generous grind of black pepper will enhance the overall taste.
Step 7
Sprinkle your desired amount of mozzarella cheese over the top. Then, artfully arrange the bok choy leaves.
Step 8
Now for the star of the dish! Carefully crack the eggs into the center of the pan, ensuring the yolks remain intact.
Step 9
Cover the pan with a lid and cook until the egg whites are set and the cheese is beautifully melted and bubbly.
Step 10
Your delicious and visually appealing Shakshuka is ready! Serve it hot with crusty bread or rice for a truly satisfying meal.
