Among the many traditional dishes enjoyed during Korean holidays, Yukjeon (beef pancakes) stands out as a dish that requires less effort but delivers exceptional flavor. I’ve been craving its savory taste and decided to make it today. Experience the tender, flavorful beef encased in a delicate, savory pancake – a perfect addition to any festive table!
Key Ingredients- Beef sirloin (or tenderloin), 400g (sliced into bite-sized pieces)
- Salt, a pinch (for seasoning)
- Black pepper, a pinch (for seasoning)
- Potato starch or all-purpose flour, sufficient amount (for coating)
- Fresh eggs, 2
- Cooking oil, generous amount (for frying)
Cooking Instructions
Step 1
Start with fresh beef sirloin. Gently pat the surface of the beef with paper towels to absorb any excess blood. This step is crucial for removing any gamey odor and ensuring a clean, delicate flavor.
Step 2
Lay a layer of paper towels on a large tray or plate. Lightly sprinkle a pinch of salt and pepper over the paper towels. This will be the first layer of seasoning.
Step 3
Place one slice of beef onto the seasoned paper towels. Evenly sprinkle a small amount of salt and pepper over the surface of the beef slice. Season each piece of beef generously but carefully to avoid over-salting.

Continue layering the seasoned beef slices on the tray, sprinkling a little salt and pepper between each layer. This ensures that the seasoning permeates the entire piece of meat. Allowing the beef to marinate like this for a short while in the refrigerator will also help tenderize it.

While the beef is marinating, prepare your coating. In a wide bowl, whisk the 2 fresh eggs until well combined to create the egg wash. In another shallow dish, place a generous amount of starch for coating.
