Fried Rice Main Ingredients

  • 99g warm cooked rice
  • 40g minced ham
  • 1 Korean green chili (Oi-mat gochu)
  • 3 cloves garlic
  • 24g enoki mushrooms
  • Pinch of black pepper
  • 10g cooking oil

Sweet Tomato Sauce

  • 3 Tbsp tomato sauce
  • 15g minced ham

Fluffy Omelet

  • 1 large egg
  • A little cooking oil

Cooking Instructions

Step 1

Finely chop the vegetables that will go into the fried rice. You can add other desired vegetables like onion, bell pepper, or carrot. Slice the garlic thinly into slivers rather than mincing; this adds a pleasant texture and prevents burning easily during cooking.

Step 1

Step 2

Finely mince the 15g of ham that will be added to the tomato sauce.

Step 2

Step 3

Take about 1/3 (approximately 15g) of the minced ham and mix it into the tomato sauce. This step will enrich the flavor of the sauce.

Step 3

Step 4

Heat 10g of cooking oil in a frying pan over high heat. A sufficiently hot pan ensures ingredients cook quickly and retain their flavor.

Step 4

Step 5

Once the pan is hot, add the sliced garlic and sauté until fragrant. If you are using green onions, add them now as well for an aromatic touch.

Step 5

Step 6

When the garlic is fragrant, add all the chopped vegetables except for the Korean green chili and enoki mushrooms. Stir-fry quickly over high heat. If using bell peppers, they can release a lot of moisture, so it’s recommended to omit them at this stage.

Step 6

Step 7

Add the 40g of minced ham to the pan with the sautéed vegetables and garlic, and stir-fry rapidly. The ham will become lightly browned and add flavor.

Step 7

Step 8

Add a pinch of black pepper to eliminate any gaminess from the ham and enhance its flavor as you stir-fry.

Step 8

Step 9

Finally, add the Korean green chili and stir-fry briefly to maintain its crisp texture. Adding it too early can release too much liquid, making the fried rice watery.

Step 9

Step 10

Once all ingredients are well stir-fried, add the 99g of warm cooked rice. Use a spatula or ladle to break up any clumps and stir-fry until the rice is evenly coated with the seasonings. Ensuring each grain of rice is coated is key.

Step 10

Step 11

Using a ladle helps mix the seasonings efficiently without pressing down on the rice, allowing the flavors to penetrate better. Stir-fry until the rice is fluffy and not clumped.

Step 11

Step 12

Transfer the finished fried rice into a serving bowl, pressing it down gently to shape it. This step forms the basic structure of the omurice.

Step 12

Step 13

In a small pot or pan, gently simmer the prepared tomato sauce with the minced ham until warm. If the sauce is too thick, you can add a little water.

Step 13

Step 14

To make the fluffy omelet, crack one egg into a bowl and whisk well. Removing the chalazae (the stringy bits) will result in a smoother omelet.

Step 14

Step 15

Lightly oil a frying pan for the omelet and heat it over high heat. A hot pan helps the egg spread thinly and evenly.

Step 15

Step 16

Once the pan is sufficiently hot, reduce the heat to medium. Pour the whisked egg thinly over the entire pan. Gently stir with chopsticks as the egg cooks to ensure it cooks evenly without burning.

Step 16

Step 17

When the edges of the omelet begin to set, fold it in half or gently flip it to cook the other side. Be careful not to overcook, as it can become dry.

Step 17

Step 18

Carefully place the cooked omelet over the shaped fried rice in the bowl. Generously ladle the warm tomato sauce over the top to complete your delicious omurice!
