The Perfect Harmony of Rich Hayashi Sauce and Fluffy Fried Rice
Let me share a secret to enjoying Hayashi Rice, a popular dish among home cooks, even more! While it’s delicious with beef, pork, or chicken, today we’re enhancing the flavor by using pork in the fried rice and tender refrigerated ham in the sauce. Top the fluffy, well-fried rice with plenty of rich Hayashi sauce for a satisfying meal that the whole family will happily devour.
Hayashi Sauce- 100g Hayashi Rice Roux (powder)
- 150g refrigerated ham
- 1 onion
- 5 shiitake mushrooms
- 700ml water
Fried Rice- 4 bowls of fluffy cooked rice
- 200g pork tenderloin or loin
- 1/2 carrot
- 1 white part of green onion
- Pinch of salt
- Pinch of pepper
- Pinch of sesame seeds
- 4 bowls of fluffy cooked rice

Cooking Instructions
Step 1
Prepare Sauce Ingredients: Thinly slice the refrigerated ham and onion. Clean and trim the shiitake mushrooms, then slice them thickly along their natural shape.
Step 2
Mix the Hayashi Roux: In a bowl, combine 100g of Hayashi rice roux powder with 700ml of water. Whisk until smooth and lump-free. (It’s best to adjust the water amount according to the product instructions for the perfect consistency.)
Step 3
Sauté Ham: Heat a pan over medium heat and add a little cooking oil. Add the sliced refrigerated ham and sauté until lightly browned to release its flavor.
Step 4
Sauté Vegetables (Part 1): Once the ham is nicely browned, add the sliced onion to the pan. Sauté until the onion becomes translucent.
Step 5
Sauté Vegetables (Part 2): When the onion is slightly softened, add the thickly sliced shiitake mushrooms and cook until the mushrooms are tender.

Simmer the Sauce: Pour the prepared Hayashi roux mixture into the pan and bring it to a boil over high heat.

Thicken the Sauce: Once the sauce boils, reduce the heat to medium-low. Stir continuously to prevent sticking and cook until it reaches your desired thick consistency. (Be careful to stir constantly to avoid burning.)

Prepare Fried Rice Ingredients: Finely chop the pork into bite-sized pieces. Finely dice the julienned carrot. Finely chop the white part of the green onion.

Sauté Pork: Heat another pan over medium heat with cooking oil. Add the finely chopped pork and sauté.

Sauté Vegetables (Fried Rice): When the pork is browned, add the diced carrot and sauté until the carrot is slightly tender.

Add Aromatics and Season: Once the carrot is partially cooked, add the chopped green onion and stir-fry to release its fragrance. Season with a pinch of salt and pepper to enhance the flavors of the pork and vegetables.

Combine with Rice: Add 4 bowls of fluffy cooked rice to the pan. Gently stir-fry with a spatula until all the ingredients are well combined. Finally, sprinkle with sesame seeds for a nutty aroma and mix.
