To reduce calorie concerns, we’re using King Oyster Mushrooms (also known as Shimofuri-shimeji), which have a delicious, meat-like texture. This is a simple, flavorful, and nutritious toast!

Toast Ingredients

  • 2 slices of bread

  • 50g King Oyster Mushrooms (Shimofuri-shimeji)
  • 2 fresh eggs
  • 2 slices of processed cheese
  • 10g butter
  • 1 tsp salt

Sauce Ingredients (Hollandaise)

  • 4 fresh eggs (yolks only)
  • 1 Tbsp lemon juice
  • 20g butter
  • 1 tsp black pepper
  • 1 tsp salt

Salad Ingredients

  • 80g mixed salad greens
  • 6 olives
  • 2 Tbsp balsamic dressing

Prepare all your ingredients. Wash the salad greens thoroughly and pat them dry. This recipe makes a generous serving for two people.

First, we’ll make the rich Hollandaise sauce. Carefully separate the egg yolks from the whites. You’ll only need the yolks, so place them in a clean bowl.

Time to season the yolks. Add 1 tsp of salt to the egg yolks.

Now, add 1 tsp of black pepper. The pepper’s aroma will beautifully complement the richness of the yolks.

We’ll now create a smooth sauce using a double boiler method. Fill a saucepan with a little water and bring it to a simmer. Place the bowl with the egg yolks over the saucepan (ensure the bottom of the bowl doesn’t touch the water). Gently whisk in the 20g of butter until it’s completely melted and incorporated.

Once the butter is melted, slowly drizzle in 1 Tbsp of fresh lemon juice while continuously whisking. The lemon juice will cut through the richness and add a bright, tangy note to the sauce.

While store-bought Hollandaise is an option, making it fresh at home is surprisingly simple and much more delicious!

Let’s prepare the ingredients that will go on our toast. Trim and prepare the spinach and mushrooms. Slice the mushrooms into bite-sized pieces.

Heat 1 Tbsp of olive oil or your preferred cooking oil in a pan over medium heat. Add the spinach and a pinch of salt, and sauté until just wilted, about 1-2 minutes. Be careful not to overcook it.

Now, sauté the King Oyster Mushrooms. Add them to the pan and cook until they are lightly browned and tender, bringing out their delicious, slightly meaty flavor.

The poached egg is the star of Egg Benedict! Bring a pot of water to a gentle simmer. You can lightly grease a ladle or a small bowl with oil to prevent the egg from sticking. Carefully crack an egg into the greased ladle/bowl and gently lower it into the simmering water. Poach for about 3-4 minutes until the whites are set and the yolk is still runny. Carefully remove the poached egg and drain any excess water.

Melt 10g of butter in the pan (or use a little olive oil) and toast the bread slices until golden brown and slightly crispy on both sides.
