Cooking Instructions
Step 1
To create a deep and smooth milk tea base, combine 300ml of fresh milk with 2 English Breakfast tea bags in a container. Ensure the tea bags are fully submerged in the milk to minimize oxidation. Cover the container and refrigerate for at least 10 hours, or overnight. This ‘cold brew’ method gently extracts the tea’s full flavor and aroma while reducing bitterness.
Step 2
For the fragrant Earl Grey cream, pour 300ml of cold heavy cream into a saucepan. Add 2 Earl Grey tea bags, ensuring they are fully immersed in the cream. Gently stir and heat over medium-low heat, allowing the cream to infuse with the bergamot essence of the Earl Grey. Do not let it boil. Once warm, remove from heat.
Step 3
Allow the warmed Earl Grey cream to cool slightly, then transfer it to an airtight container. Refrigerate for at least 10 hours, or preferably overnight, to let the Earl Grey flavor fully develop. This chilling and steeping process is key to achieving a rich and aromatic cream.
Step 4
Once the milk tea base has steeped, stir in 30ml of syrup. Adjust the sweetness to your preference. In a separate bowl, pour the chilled Earl Grey cream, add 30ml of syrup, and whip using a whisk or electric mixer until soft peaks form. You’re looking for a consistency that is light and billowy, not stiff.
Step 5
Prepare a glass filled with ice. Carefully pour the steeped milk tea base into the glass, filling it about two-thirds full. Gently spoon or pipe the whipped Earl Grey cream on top of the milk tea to create beautiful layers.
Step 6
Garnish with a few Earl Grey tea leaves or whole tea leaves if desired. The best way to enjoy this Earl Grey Cream Milk Tea is without stirring – sip it directly from the glass like an Einspänner, allowing the interplay of the robust tea and the sweet, creamy topping to unfold on your palate. It’s an elegant treat for any time of day!
