- 150g ground pork
- 2/3 medium onion
- 1 handful green onions (for scallion oil)
- 1 Tbsp olive oil (for scallion oil)
Sauce Ingredients- 1 Tbsp doubanjiang (spicy broad bean paste)
- 1 Tbsp oyster sauce
- 1/2 Tbsp Shaoxing wine (or mirin)
- 1/2 Tbsp water
- 1/2 Tbsp minced garlic
For Coating Eggplant- 1 Tbsp all-purpose flour
- 1 Tbsp cornstarch
- 1 Tbsp doubanjiang (spicy broad bean paste)
- 1 Tbsp oyster sauce
- 1/2 Tbsp Shaoxing wine (or mirin)
- 1/2 Tbsp water
- 1/2 Tbsp minced garlic

Step 1
Let’s start by preparing the flavorful sauce that’s key to this dish. In a small bowl, combine 1 tablespoon of doubanjiang, 1 tablespoon of oyster sauce, 1/2 tablespoon of Shaoxing wine (or mirin), 1/2 tablespoon of water, and 1/2 tablespoon of minced garlic. Stir everything together until well combined to create a balanced sweet and spicy sauce.

Wash the fresh eggplants thoroughly and slice them diagonally into pieces about 2 to 3 cm thick. This cut helps the eggplant absorb the sauce beautifully and creates a pleasant texture.
