Ingredients- Spaghetti 60g
- Onion 40g (about 1/4 medium)
- Bacon 20g (2-3 strips)
- Mushrooms 20g (about 2-3 button mushrooms)
- Minced garlic 10g (1 Tbsp)
- Heavy cream 180ml
- Milk 200ml
- Grana Padano cheese (or Parmesan) to taste
- Salt to taste
- Black pepper to taste
- Butter 15g (1 Tbsp)
Cooking Instructions
Step 1
Before you begin cooking, ensure your fresh cream is refrigerated. Having all other ingredients prepped and ready will make the cooking process smooth and enjoyable. Most of these ingredients are pantry staples, making this recipe accessible and stress-free.
Step 2
Bring a generous pot of water to a rolling boil over high heat. Once boiling, add the 60g of spaghetti and approximately 1g (about 1/5 tsp) of salt. Adding salt not only seasons the pasta but also raises the boiling point of the water, helping the pasta cook evenly. Cook the spaghetti according to the package directions. While the pasta is cooking, you can start preparing the sauce in a separate pan.
Step 3
Melt 15g of butter in a pan over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Then, add the finely chopped onion (40g) and cook until it becomes translucent. Sautéing the onion until translucent will bring out its natural sweetness.
Step 4
Add the bacon (20g), cut into bite-sized pieces, and sliced mushrooms (20g) to the pan. Cook them together until the bacon is lightly browned and the ingredients are tender. This process will render the bacon fat, adding rich flavor to the sauce base. Continue cooking until the onions are translucent and the ingredients are slightly softened.
Step 5
Pour in the 180ml of heavy cream and 200ml of milk. Reduce the heat to medium-low and let the sauce simmer gently, allowing it to thicken slightly. Watch for the edges to begin to bubble, then lower the heat to maintain a gentle simmer.
Step 6
Drain the cooked spaghetti, reserving a little pasta water, and add it directly to the pan with the sauce. The reserved pasta water can be used later to adjust the sauce consistency if needed.
Step 7
Generously sprinkle in the grated Grana Padano cheese (or Parmesan cheese) to your liking. Stir continuously until the cheese is fully melted and the sauce becomes smooth and creamy, about 1 more minute of gentle cooking. Season with salt and freshly ground black pepper to taste.
