Jjimdak Ingredients

  • 1 pack (approx. 1kg) chicken cut for stir-fry
  • 2 medium potatoes
  • 1 medium onion
  • 1 dried chili pepper (or fresh red/green chili peppers can be added)

Jjimdak Seasoning

  • 2 Tbsp soy sauce
  • 2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp cooking wine or mirin
  • 1 Tbsp plum extract (or syrup)
  • 1/2 Tbsp ginger paste (or minced ginger)
  • 1 Tbsp minced garlic
  • 200ml milk (for removing chicken odor)

Cooking Instructions

Step 1

First, let’s prepare the chicken. Rinse the chicken pieces for stir-fry thoroughly under running water. To remove any gamey odor, soak the chicken in 200ml of milk for about 30 minutes. After soaking, discard the milk and rinse the chicken again with cold water, then drain well. Place the chicken in a pot or wok and pour boiling water over it to lightly blanch. Discard the blanching water. This step helps remove impurities and blood, resulting in a cleaner tasting Jjimdak. Place the cut potatoes, onion, dried chili pepper (or prepared fresh chilies) at the bottom of your electric pressure cooker’s inner pot. Arrange the blanched chicken pieces on top.

Now, let’s make the delicious Jjimdak sauce. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp gochujang, 1 Tbsp gochugaru, 3 Tbsp cooking wine (or mirin), 1 Tbsp plum extract, 1/2 Tbsp ginger paste, and 1 Tbsp minced garlic. Mix these ingredients well until thoroughly combined. Pour this prepared sauce over the chicken and vegetables in the pressure cooker. Gently toss everything together to ensure the sauce evenly coats the chicken and vegetables.

Add the pre-soaked glass noodles for extra texture and flavor. (Glass noodles should be soaked in cold water for at least 30 minutes before cooking.) If you wish to add other vegetables like green onions, carrots, or mushrooms, now is the time to include them. Once all ingredients are in the pot, select the ‘Multi-Cook’ or ‘Steam’ function on your electric pressure cooker and press the start button. The cooking time is usually around 20-25 minutes. (Please adjust the cooking time according to your pressure cooker model.)

Your delicious Jjimdak is ready! Once the pressure has naturally released from the cooker, open the lid. You’ll be greeted by a glistening, mouthwatering braised chicken. It’s absolutely delightful served over a bed of warm rice. For an extra touch of flavor and aroma, you can sprinkle a little sesame oil and toasted sesame seeds on top before serving.
