A healthy and satisfying keto gimbap recipe made with plenty of eggs instead of rice, perfect for a low-carb, high-fat diet.
Main Ingredients- 3 sheets of Gim (seaweed)
- 5 large eggs
- 1/2 pack pickled radish (danmuji)
- 1/2 pack braised burdock root (u-reong)
- 1 carrot
- 1/2 bunch spinach
- 3 strips of imitation crab meat (mat-sal)
- 1/2 pack ham

Step 1
This keto gimbap is designed for a low-carb, high-fat lifestyle. We’re replacing the traditional rice with a generous amount of protein-rich eggs, making it a delicious and satisfying option for those managing their carbohydrate intake.
Step 2
Prepare all your gimbap fillings as you normally would, with the exception of rice. This includes pickled radish, braised burdock root, shredded carrot, spinach, imitation crab meat, and ham. For this recipe, make sure to prepare extra-thick egg omelets (jidan) to serve as the ‘wrapper’.
Step 3
Whisk the eggs thoroughly and cook them into thick omelets. The key to a great keto gimbap is the abundance of egg, so don’t be shy – make your egg sheets nice and substantial!

Lay a sheet of gim on your rolling mat. Spread a generous layer of the cooked egg omelet over the gim. Then, arrange your prepared fillings – pickled radish, burdock root, carrot, spinach, imitation crab, and ham – attractively on top of the egg. Loading up on fillings is what makes gimbap so delicious!
Step 5
Carefully roll the gimbap, keeping the fillings tucked in tightly to prevent them from falling out. Just like making regular gimbap, ensure you roll it firmly and seal the edge of the gim to keep everything in place.
