Easy Soufflé Pancakes Using a Pancake Mix
Say goodbye to the hassle of whipping meringue! With a convenient soufflé pancake mix, you can easily create fluffy and delightful soufflé pancakes right in your own kitchen. Perfect for a weekend brunch, a special occasion treat, or a sweet afternoon indulgence.
Soufflé Pancake Ingredients- 1 bag Soufflé Pancake Mix (approx. 160g)
- 2 fresh eggs
- 80ml milk
- 5 fresh cherries (for garnish)
- A little cooking oil or butter (for greasing the pan)
Quick Custard Cream- 50g Custard Mix (equivalent to half a bag of pancake mix)
- 150ml milk
- 50g Custard Mix (equivalent to half a bag of pancake mix)

Cooking Instructions
Step 1
The star of today’s recipe is this soufflé pancake mix, known for its wonderfully fluffy texture! Nowadays, there are many convenient mixes available that make it easy to enjoy soufflé pancakes at home, which is fantastic.
Step 2
While preparation methods can vary slightly by brand, follow my steps carefully, and you’ll be able to create café-quality soufflé pancakes in your own kitchen. Don’t forget to check the instructions on the package for extra guidance!
Step 3
Inside the soufflé pancake mix box I purchased, there was 1 packet of custard mix and 2 packets of pancake mix. For today’s recipe, we’ll be using 1 bag of pancake mix and half of the custard mix. (If you’re using a different brand, adjust the quantities according to the product’s instructions.)
Step 4
Pour the contents of 1 bag of pancake mix (approximately 160g) into a mixing bowl. Crack in 2 fresh eggs and measure out 80ml of cold milk to add to the bowl.
Step 5
Using a whisk or an electric mixer, beat the ingredients until well combined and smooth, ensuring there are no lumps of dry mix. It’s important not to overmix; just blend until the batter is smooth and has a nice consistency.

And there you have it – a smooth and luscious pancake batter, ready to transform into delicious soufflé pancakes!
Step 7
Heat your pan over low heat. Lightly dampen a paper towel with cooking oil or butter and wipe the surface of the pan to create a thin, even coating. Too much oil can prevent the pancakes from rising properly, so aim for a very light sheen. While a 28cm pan is typically used for 4 pancakes, we’ll make them extra thick today by cooking 3 pancakes. Spoon round dollops of batter onto the pan, then add another spoonful on top of each to build height. This creates that signature thick soufflé appearance.
Step 8
Once the first side of the pancakes is lightly golden, carefully flip them over. Immediately cover the pan with a lid and continue to cook on low heat, allowing them to cook through gently. Covering the pan helps retain moisture, ensuring they remain extra moist and fluffy.
Step 9
Ta-da! Perfectly golden and beautifully puffed soufflé pancakes are ready. Look at that satisfying thickness – they’re truly appealing, aren’t they? It’s amazing how well they puff up even when made from a mix!
Step 10
Now, let’s make that delightful custard cream. In a bowl, combine half a packet of custard mix (50g) with 150ml of cold milk. Whisk together, then use an electric mixer on medium speed for about 1 minute, followed by high speed for another minute, until the cream is smooth and luscious. If it seems too thick, you can add a splash more milk.
Step 11
This custard cream looks and tastes divine! Here’s a pro tip: for an even smoother and richer flavor, mix this custard cream with an equal amount (1:1 ratio) of whipped cream. Feel free to try it!
Step 12
For garnish today, I’ve chosen fresh, vibrant cherries. We’ll use 3 whole cherries and slice the remaining 2. You can use any fruits you like – fresh blueberries, juicy strawberries, sweet bananas, or other seasonal fruits – to decorate and personalize your pancakes.
Step 13
Stack the three cooked soufflé pancakes one on top of the other, generously spreading the creamy custard between each layer. Place the whole cherries on the very top and artfully scatter the sliced cherries around for a beautiful presentation. These are best enjoyed immediately while warm!
