Thinly slice the tomato, eggplant, and zucchini into approximately 0.5 cm thick rounds – these will form the beautiful visual appeal of your ratatouille! Finely dice the onion, some of the eggplant, and zucchini that will be sautéed with the meat. You can use a knife for dicing or a food processor for convenience.

Heat a pan over medium heat and add the ground pork. Begin to stir-fry the pork, allowing it to brown and release its natural oils. Cooking it thoroughly will help remove any gamey odors and enhance its flavor.

Once the pork is partially cooked, add all the finely diced vegetables (onion, eggplant, and zucchini) to the pan. Continue to sauté them together until the vegetables soften and the onions become translucent. This step is crucial for developing the base flavor. Season with a pinch of salt and pepper, stirring well to distribute the seasoning evenly.

After all the ingredients have been nicely sautéed, pour in 1 cup of tomato sauce. Gently simmer the mixture to allow the sauce to meld with the vegetables and meat, creating a delicious sauce base. There’s no need to cook it for too long.

For this recipe, I used individual small oven dishes and arranged the slices in a semi-circular pattern, layering zucchini, eggplant, and tomato sequentially.
