This recipe shows you how to make fresh, creamy ricotta cheese at home using plain yogurt or heavy cream yogurt, without any cooking. Enjoy delicious homemade ricotta perfect for salads, sandwiches, and more!
Ingredients- Heavy Cream Yogurt (or Plain Yogurt) 3 containers
Cooking Instructions
Step 1
Prepare your container: Place a paper cup inside a tall glass or heat-resistant container. This setup helps keep your container clean as the whey drains.
Step 2
Set up the filter and add yogurt: Spread a coffee filter or cheesecloth over the paper cup. Carefully open the 3 containers of heavy cream yogurt and pour them into the lined cup. This step allows the yogurt’s liquid (whey) to drain naturally.
Step 3
Assist the draining process: Cover the yogurt with another piece of the filter paper. Gently press down with your hand to encourage more whey to drain out. Be careful not to press too hard, as this can affect the cheese’s texture.
Step 4
Refrigerate and let it set: Cover the entire setup and place it in the refrigerator for about 1 day. During this time, the whey will separate, and the concentrated yogurt will transform into a creamy ricotta cheese.
Step 5
Check and adjust firmness: After 1 day, remove the ricotta from the refrigerator. It should be nicely drained and creamy. If you prefer a firmer texture, place a heavy cup or bowl on top of the covered cheese for an additional 1-2 hours to press out more moisture. This homemade ricotta is wonderful on toast, in salads, or in desserts!
