Main Ingredients- 1 medium eggplant
- A handful of medium-sized dried anchovies (about 30g)
- 3 Tbsp cooking oil
- 2-3 cloves garlic, minced
Sauce- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1 Tbsp corn syrup or rice syrup
- 5 Tbsp water
- A pinch of sesame seeds (for garnish)

Cooking Instructions
Step 1
Wash the eggplant thoroughly, remove the stem, and slice it into rounds about 1 cm thick. Slicing them too thinly might cause them to break apart during cooking, so aim for a moderate thickness.
Step 2
In a small bowl, combine 1 Tbsp gochujang, 1 Tbsp soy sauce, 1 Tbsp corn syrup (or rice syrup), and 5 Tbsp water. Whisk until smooth to create a delicious sauce.
Step 3
Heat 3 Tbsp of cooking oil in a pan over medium heat. Add all the sliced eggplant and stir-fry, flipping occasionally, until the eggplant is lightly golden brown and tender. Stir-frying the eggplant first allows it to absorb the oil, resulting in a chewier texture.
Step 4
Once the eggplant is partially cooked, add the minced garlic and stir-fry until fragrant.

Now, add a handful of dried anchovies (or small anchovies) to the pan. Gently stir-fry to avoid breaking them, which helps remove any fishy odor and adds a nutty flavor. When the anchovies are slightly cooked, pour the prepared sauce into the center of the pan. Once the sauce begins to boil, stir-fry everything together quickly for about 1-2 minutes, ensuring the sauce coats the eggplant and anchovies evenly. Be careful not to overcook, as the eggplant can become mushy.
