Tart Crust Ingredients

  • 2 medium sweet potatoes
  • 2 Tbsp starch (potato or corn)
  • 2 Tbsp milk

Sweet Egg Filling

  • 3 egg yolks
  • 3 Tbsp unsweetened plain yogurt
  • 1 Tbsp oligosaccharide (or honey)
  • 1 Tbsp stevia (or sugar substitute)

Cooking Instructions

Step 1

First, wash the two medium sweet potatoes thoroughly. Place them in a microwave-safe dish with about 1-2 tablespoons of water, without peeling them. Cover with plastic wrap or a lid and microwave for approximately 7 minutes, or until tender. (Adjust cooking time based on the size of the sweet potatoes.)

Step 1

Step 2

Once cooked, let the hot sweet potatoes cool slightly before peeling them. Place the peeled sweet potatoes in a bowl and mash them thoroughly with a fork or potato masher until smooth and lump-free. Add 2 tablespoons of starch and 2 tablespoons of milk. Mix well until the sweet potato, starch, and milk are fully combined into a dough. Knead it a bit until it becomes slightly sticky.

Step 2

Step 3

Now, let’s prepare the sweet egg filling that will make these tarts so delicious! In a small bowl, lightly beat the 3 egg yolks. Then, add 3 tablespoons of unsweetened plain yogurt, 1 tablespoon of oligosaccharide, and 1 tablespoon of stevia. Whisk everything together until smooth and well combined. Using stevia instead of sugar allows you to add sweetness without worrying about calories.

Step 3

Step 4

We’ll now use the prepared sweet potato dough to form the tart crusts. Line the inside of baking muffin cups or paper cups with the sweet potato dough, about 1 cm thick. Press the dough down gently with your fingers or a small spoon to create a base and sides. Then, generously fill the sweet potato crusts with the prepared egg filling.

Step 5

This is the final step! Preheat your oven or air fryer to 200°C (400°F). Carefully place the assembled sweet potato egg tarts into the preheated oven/air fryer and bake for about 15 minutes, or until golden brown. Your delicious sweet potato egg tarts are ready! They are wonderful served warm or after cooling slightly.
