  • Cooking Time : Within 15 minutes
  • Difficulty : Anyone

Main Ingredients

  • 7 small potatoes
  • 1/2 package enoki mushrooms
  • 1 handful dried shiitake mushrooms
  • About 8 cherry tomatoes (adjust to your preference)
  • A few black olives (optional)
  • 1/2 onion

Seasoning & Others

  • 6 Tbsp tomato sauce
  • Pinch of salt
  • Pinch of black pepper
  • Generous amount of mozzarella cheese

Cooking Instructions

Step 1

First, peel the potatoes. Place them in a pot with water and a pinch of salt, then boil until they are tender and easily pierced with a fork. If the potatoes are very large, cut them in half before boiling to speed up the cooking process.

Step 1

Step 2

While the boiled potatoes are still hot, mash them thoroughly using a fork or a potato masher. Season the mashed potatoes with a pinch of salt and pepper for enhanced flavor.

Step 2

Step 3

Prepare the topping ingredients. Feel free to use any vegetables you have in your refrigerator! Thinly slice the onion. Trim the base of the enoki mushrooms and separate the strands. Halve the cherry tomatoes. Rehydrate the dried shiitake mushrooms in lukewarm water, squeeze out excess moisture, and lightly season them with sesame oil and soy sauce.

Step 3

Step 4

Heat a pan with a generous amount of olive oil. Start by sautéing the sliced onions until they become translucent. Add the seasoned shiitake mushrooms and stir-fry them together to release their aroma.

Step 4

Step 5

While button mushrooms are ideal, enoki mushrooms work well as a substitute. Since enoki mushrooms release a lot of moisture, stir-fry them quickly over medium-high heat to prevent excess water. Lightly season with salt.

Step 5

Step 6

Prepare your serving dish. If using an oven, select an oven-safe dish. If using a microwave like me, ensure the dish is microwave-safe. Lightly butter the bottom of the dish; this prevents the potato base from sticking and adds a lovely richness. Spread the mashed potatoes evenly across the bottom of the dish and press down firmly with a spoon or spatula to create a compact base.

Step 6

Step 7

Generously spread the tomato sauce over the potato base. Then, arrange your prepared toppings, such as the sautéed onions, shiitake mushrooms, enoki mushrooms, and cherry tomatoes, attractively on top.

Step 7

Step 8

Finally, sprinkle a generous amount of mozzarella cheese over the toppings. Add black olives if you have them for extra flavor and visual appeal. Microwave for about 3 minutes, or until the cheese is melted and bubbly. Check periodically to ensure the cheese doesn’t burn.
