Introducing a sweet and spicy Spam stir-fry sauce made with finely chopped Spam and plenty of vegetables. Based on Lee Chan-won’s recipe from ‘Pyeonstaurant’, we’ve adjusted the chili pepper amount to be enjoyable for everyone, reducing the spiciness. This dish is so addictive it’ll have you clearing your rice bowl in no time. Let’s make it together!
Main Ingredients- 1 can Spam (approx. 200g)
- 3 Cheongyang chili peppers (adjust to your spice preference)
- 1 red chili pepper (for color)
- 1 stalk green onion (white parts mainly)
- 1/2 onion
- 1 Tbsp minced garlic
- A little cooking oil
Seasoning Ingredients- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 1.5 Tbsp gochugaru (Korean chili flakes – adjust for spice)
- 3 Tbsp cheongju (rice wine) or mirin
- 1 Tbsp perilla oil
- A pinch of black pepper
- A pinch of sesame seeds
- 1 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 1.5 Tbsp gochugaru (Korean chili flakes – adjust for spice)
- 3 Tbsp cheongju (rice wine) or mirin
- 1 Tbsp perilla oil
- A pinch of black pepper
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, let’s prepare the vegetables. Finely chop the onion. Remove the seeds from the red and Cheongyang chili peppers and mince them. Slice the green onion thinly. (If you like it spicy, feel free to add more Cheongyang peppers!)
Step 2
Instead of using Spam directly, it’s best to blanch it briefly in hot water for about 1 minute. This helps reduce its inherent oiliness and saltiness, resulting in a cleaner flavor.
Step 3
Drain the blanched Spam and then either mash it finely with the back of a knife or chop it into small pieces. Leaving some small chunks will give it a better texture.
Step 4
Heat a little cooking oil in a pan. Add the minced onion, minced chili peppers, and sliced green onion. Stir-fry over medium-low heat for 1 minute until fragrant. Finally, add the minced garlic and stir-fry together.
Step 5
Once the vegetables are slightly softened, add the mashed Spam. Then, add all the seasoning ingredients: 1 Tbsp gochujang, 2 Tbsp soy sauce, 2 Tbsp sugar, 1.5 Tbsp gochugaru, 3 Tbsp cheongju, and a pinch of black pepper. Mix well.
Step 6
Stir-fry over medium heat for 2-3 minutes, ensuring the ingredients and sauce are evenly combined. Be careful not to burn the sauce.
Step 7
Just before turning off the heat, drizzle in 1 Tbsp of perilla oil and give it a quick stir. The nutty aroma of the perilla oil will enhance the overall flavor.
Step 8
Finally, taste the stir-fry and adjust the seasoning to your preference. If it’s too bland, add a little more soy sauce. If you prefer it sweeter, add a bit more sugar.

And there you have it – a delicious Spam stir-fry sauce! Serve generously over warm rice for an incredibly satisfying meal. It’s also fantastic wrapped in seaweed (gim)!
