  • 1/2 Tbsp Sugar
  • 1 Tbsp Sesame oil

Wash the scallions thoroughly. You can chop them finely or cut them into slightly larger pieces, about 2-3 cm long, depending on your preference. Cutting them larger adds a pleasant chewy texture.

Heat a dry pan (without oil) over medium heat. Place the laver sheets on the pan and toast them until lightly golden brown on both sides. Be careful not to burn the laver; toasting it slightly until it’s a bit crisp is ideal.

Instead of crushing the toasted laver by hand, which can be messy, using a disposable plastic bag makes the process much cleaner and easier. Place the toasted laver sheets into the bag and gently crumble them into bite-sized pieces by rubbing them between your hands inside the bag. You’ll be surprised how easily it breaks apart!

In a bowl, combine 2 tablespoons of soy sauce, 1/2 tablespoon of sugar, and 1 tablespoon of sesame oil. Mix them well to create the seasoning sauce in advance. This is the golden ratio for a perfect balance of savory, sweet, and nutty flavors.
