Basic Ingredients- 120g All-purpose flour
- 80ml Olive oil (recommend a mild extra virgin or pure olive oil)
- 80ml Milk (room temperature)
- 80g Sugar
- 2 Fresh eggs (room temperature)
- 5g Baking powder
- 1g Salt (approx. 1/4 tsp)
Cooking Instructions
Step 1
Prepare the cake pan: Lightly grease your cake pan with butter or oil, then dust it with a bit of flour (all-purpose or bread flour). Tap out any excess. This step is crucial to ensure your cake doesn’t stick to the pan after baking, making removal a breeze.
Step 2
Sift dry ingredients: In a medium bowl, combine the 120g of all-purpose flour, 5g of baking powder, and 1g of salt. Sift these ingredients together 2-3 times. Sifting aerates the flour, removes lumps, and helps create a lighter cake texture.

Whisk eggs and sugar: In a separate large bowl, crack in the 2 eggs and add the 80g of sugar. Whisk gently with a balloon whisk for about 30 seconds, just until the sugar is mostly dissolved and the mixture is lightly combined. Avoid over-whipping to create a foamy meringue; we’re just incorporating the ingredients here.
Step 4
Add olive oil: Pour the 80ml of olive oil into the egg and sugar mixture. Whisk gently again for about 30 seconds until it’s just incorporated. This helps emulsify the oil with the wet ingredients.

Incorporate milk: Add the 80ml of room temperature milk to the bowl. Mix gently for another 30 seconds until everything is just combined. Ensure the milk is at room temperature to prevent the batter from curdling.

Combine wet and dry ingredients: Gradually add the sifted dry ingredients (from step 1) to the wet ingredients, in 2 to 3 additions. Gently fold or mix with a whisk or spatula until just combined and no dry flour streaks remain. Be careful not to overmix, as this can lead to a tough cake.

Pour batter into the pan: Pour the finished cake batter into your prepared cake pan. To help release any large air bubbles and ensure a smooth surface, gently tap the pan on your countertop 2-3 times.

Bake the cake: Place the cake pan in a preheated oven at 170°C (340°F) and bake for approximately 30 minutes. Baking times can vary depending on your oven.
