Today, I’ve recreated Park Sol-mi’s pork belly donburi, featured on the popular Korean cooking show ‘Pyeonstorang’, with a simplified recipe for home cooks. This dish features tender pork belly, sweet caramelized onions, and a rich, savory sauce made with Doenjang (Korean fermented soybean paste) and a luscious egg yolk. It’s a comforting and flavorful meal that’s surprisingly easy to make!
Main Ingredients- Pork belly, 4 strips (about 300-400g)
- Onion, 1/2 medium
- Scallions, chopped, for garnish
- Egg yolks, 2 large
- Cooked rice, 2 bowls
Special Egg Yolk Doenjang Sauce- Beomilkong Doenjang (or your favorite Doenjang) 1 Tbsp
- Soy sauce 2 Tbsp
- Corn syrup (or Oligosaccharide) 1 Tbsp
- Mirin (Rice wine) 1 Tbsp
- Sugar 1/2 Tbsp
- Vinegar 1 Tbsp
- Water 100ml
- Beomilkong Doenjang (or your favorite Doenjang) 1 Tbsp
- Soy sauce 2 Tbsp
- Corn syrup (or Oligosaccharide) 1 Tbsp
- Mirin (Rice wine) 1 Tbsp
- Sugar 1/2 Tbsp
- Vinegar 1 Tbsp
- Water 100ml
Cooking Instructions
Step 1
Let’s start by making the special egg yolk Doenjang sauce, the heart of this delicious donburi. In a small bowl, combine the Doenjang, soy sauce, corn syrup, mirin, sugar, vinegar, and 100ml of water. Whisk everything together until well combined and smooth, ensuring no lumps remain. It’s important to stir thoroughly until the sugar and corn syrup are fully dissolved. Set the sauce aside for later.
Step 2
Now, it’s time to cook the pork belly to perfection. Cut the pork belly into bite-sized pieces, about 2-3 cm wide. Heat a pan over medium heat, then add the pork belly. Cook, stirring occasionally, until it’s golden brown and crispy on all sides. If there’s excessive grease, you can gently pat it dry with a paper towel. Once the pork belly is nicely browned, add the thinly sliced onion to the pan and stir-fry together with the pork until the onion becomes translucent.
Step 3
With the pork belly and onions cooked, pour the prepared egg yolk Doenjang sauce into the pan. Reduce the heat to medium-low and let the sauce simmer and thicken, coating the pork and onions evenly, for about 2-3 minutes. Stir intermittently to prevent burning. You’ll start to smell the wonderful aroma!
Step 4
This is the final step! Fill your serving bowls with warm cooked rice. Generously spoon the flavorful pork belly and onion mixture over the rice. Garnish with freshly chopped scallions, and finally, carefully place two egg yolks in the center of the donburi. You’ve now created a magnificent Pork Belly Donburi! For an even richer taste, break the egg yolks and mix them into the rice and toppings before enjoying. Enjoy your delicious meal!
