Introducing easy-to-make, moist, and fluffy egg cupcakes using your home’s hotcake mix. These are perfect as a snack for kids or as a brunch option for special occasions!
Cupcake Batter Ingredients- 1 bag (250g) Woori Mill Hotcake Mix
- 2 fresh eggs
- 125g granulated sugar
- 65ml milk
- 190g unsalted butter, softened
Topping Ingredients (Choose as you like)- Egg (for the center of the cupcake)
- Thinly sliced bacon or ham
- Shredded mozzarella cheese (generous amount)
- Dried parsley flakes (for color and aroma)
- Nuts (walnuts, almonds, etc.), or chocolate chips (if you want extra sweetness)

Cooking Instructions
Step 1
First, let’s prepare the cupcake batter. In a large bowl, combine the softened butter (190g) and granulated sugar (125g). Cream them together with a whisk until light and fluffy, resembling a smooth cream.
Step 2
Add the 2 eggs one at a time, beating well after each addition to ensure they are fully incorporated and the mixture doesn’t curdle. Next, gradually pour in the milk (65ml) while mixing until the batter is smooth. Finally, sift the hotcake mix (1 bag or 250g) over the wet ingredients. Gently fold it in with a spatula until just combined and no dry flour streaks remain. Be careful not to overmix, as this can result in a tough cake!
Step 3
Now, let’s prepare to bake the cupcakes. Lightly grease the inside of paper cups or muffin liners with oil, or line them with parchment paper. Fill each cup about 2/3 full with the batter. This amount of batter should yield approximately 5 to 7 cupcakes.
Step 4
It’s time for the fun topping part! Arrange the thinly sliced bacon (or ham) attractively on top of the batter. Carefully place an egg in the center of each cupcake, ensuring the yolk doesn’t break. Sprinkle generously with shredded mozzarella cheese, and finish with a dusting of dried parsley flakes for color and fragrance. If you’re adding nuts or chocolate chips, sprinkle them on at this stage.
Step 5
Bake in a preheated oven at 180°C (350°F) for at least 25 minutes. Baking time may vary depending on your oven, so keep an eye on them to prevent burning.
