Ingredients- 4 Tbsp cooking oil
- 300g thinly sliced pork (for stir-fry)
- 1 green bell pepper
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 20 cloves garlic
- 2 Tbsp oyster sauce
- 3 Tbsp chili oil
- 2 Tbsp potato starch
- 1 egg white
- 2 Tbsp cooking wine (mirin or similar)
- Pinch of salt
- Pinch of black pepper
- Pinch of toasted sesame seeds
- Pinch of sesame oil
Cooking Instructions
Step 1
First, slice the pork into bite-sized pieces and place them in a bowl. Season lightly with salt and pepper. Then, add potato starch and egg white, and gently mix with your hands until well combined. This marination will make the pork extra tender and flavorful.
Step 2
Thinly slice the garlic. Wash the onion and bell peppers (green, red, yellow) under running water, remove the seeds, and slice them into strips of moderate thickness. Cutting them not too thinly is key to retaining a pleasant crunch.
Step 3
Heat a pan with a generous amount of cooking oil over medium-high heat. Add the sliced garlic and stir-fry until fragrant. Once the garlic is slightly cooked, add the marinated pork. Break up any clumps and stir-fry until the pork changes color.
Step 4
When the pork is about halfway cooked, add the sliced onion to the pan. Stir-fry together with the pork until the onions begin to turn translucent.
Step 5
Add all the prepared bell pepper strips to the pan. Stir-fry quickly over high heat. The key here is to cook them just enough to retain their crispness, so avoid overcooking.
Step 6
As soon as the vegetables start to soften slightly, add the oyster sauce and chili oil. Stir-fry rapidly to ensure all ingredients are well coated with the sauce. Cooking quickly over high heat preserves the texture of the vegetables and the tenderness of the pork.
Step 7
Just before turning off the heat, stir in the cooking wine and sesame oil. Finish by sprinkling toasted sesame seeds over the top. This dish is perfectly served with freshly steamed flower buns or rice.
