Hello everyone! Are you looking for a healthy and delicious diet meal? Today, I’m going to introduce a ‘Pumpkin Bread’ that anyone can easily make without flour. It’s a moist and soft, wholesome bread perfect as a simple meal replacement!
Main Ingredients- 1/2 small pumpkin (approx. 250-300g)
- 2 eggs
- 1 sachet mixed nuts (approx. 30-40g)
Sweetener- 1 Tbsp oligosaccharide (or honey, maple syrup can be substituted)

Cooking Instructions
Step 1
First, wash the pumpkin thoroughly and steam it until very soft. It should be easily pierced with a fork, which usually takes about 20-30 minutes. While the steamed pumpkin is still warm, remove the skin. Place the flesh in a mixing bowl and mash it finely using a fork or potato masher. It’s important to mash it smoothly without any lumps.
Step 2
Add 2 fresh eggs to the mashed pumpkin and mix well. Whisk or stir with a spatula until the eggs are evenly combined with the pumpkin, creating a moist batter consistency.
Step 3
Now, add the prepared mixed nuts and 1 tablespoon of oligosaccharide. Mix again thoroughly. The nuts add a nice texture, and the oligosaccharide provides a subtle sweetness. Feel free to adjust the amount of nuts or add dried fruits according to your preference.
Step 4
Pour the pumpkin batter into a microwave-safe container (like a mug or a heatproof bowl), filling it about 80% full. Be careful not to overfill, as it might spill over. Microwave for about 5 minutes. (Note: Cooking time may vary depending on your microwave’s wattage. Recommended for 700W: 5 minutes; for 1000W: 3-4 minutes).
Step 5
After microwaving, carefully remove the container. Insert a chopstick or skewer into the center of the bread. If it comes out clean without any batter sticking to it, it’s fully cooked. If it’s not fully cooked, microwave in additional 30-second to 1-minute increments until done. Once cooked, let the bread cool slightly before removing the plastic wrap.
Step 6
Once slightly cooled, cut the pumpkin bread into bite-sized pieces. Your healthy and delicious ‘Pumpkin Bread’ is now complete! Enjoy it as a light breakfast or a healthy snack. Leftover bread can be stored in an airtight container in the refrigerator for 2-3 days.
