Ingredients (for 60 servings)

  • Gimbap seaweed sheets 60 ea
  • Cooked rice 5kg
  • Spam 4kg
  • Egg omelet slices 2kg
  • Square fish cakes 1kg
  • Sesame oil 200ml
  • Salt (seasoning salt) 300g
  • Sesame seeds 100g

Cooking Instructions

Step 1

First, rinse the Spam under hot running water to remove any impurities, then slice it into 1cm thick rectangular pieces. Briefly blanch it in boiling water to drain excess oil, then pan-fry until golden brown and let it cool for the best flavor.

Cut the egg omelet into slices about 0.7cm thick, and then into rectangular shapes similar in size to the Spam. This adds a soft and savory taste, enhancing the gimbap’s overall flavor.

Slice the square fish cakes into rectangles, roughly the same size as the egg omelet. Blanch them in boiling water to remove any residue and to achieve a chewy texture.

Season the warm cooked rice with salt. Add sesame oil and sesame seeds, then mix gently with a spatula until well combined. Be careful not to clump the rice. The fragrant sesame oil will make the rice even more delicious.

Using scissors, cut about halfway through the center of each gimbap seaweed sheet to create four sections. In each section, arrange portions of the prepared rice, Spam, egg omelet, and fish cake. Avoid overfilling with rice.
