  • 1 Tbsp commercial gochujang (red chili paste)
  • 1 tsp minced garlic
  • 3 Tbsp oligosaccharide (or corn syrup)
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, prepare the doenjang and gochujang, which form the base flavor of the ssamjang. In a bowl, combine 4 tablespoons of commercial doenjang and 1 tablespoon of commercial gochujang. Using store-bought pastes makes it easy and ensures a delicious result. (Tip: You can adjust the ratio of doenjang and gochujang to your preference.)

Add 1 teaspoon of minced garlic to enhance the flavor of the ssamjang. The slight pungency of the garlic will make the ssamjang taste richer and more complex.

Prepare the main ingredient: tuna. Take one large can of tuna and carefully drain all the oil by tilting the can over a sieve. It’s crucial to remove as much oil as possible to prevent the ssamjang from tasting greasy and to achieve a clean flavor.
