Corn Fritter Essentials- Canned corn, 200g (drained)
- 3 large fresh eggs
- A small amount of carrot (finely minced)
- A small amount of green onion (finely minced)
- Salt, 2-3 pinches (to taste)
- 1/2 Tbsp cooking wine (mirin or sake, to reduce odor and enhance flavor)
- Cooking oil, for frying (as needed)
Cooking Instructions
Step 1
First, crack 3 fresh eggs into a large bowl and whisk them gently with a fork or whisk until lightly beaten. Next, finely mince a small amount of green onion and carrot and add them to the beaten eggs. Set aside.
Step 2
Drain the canned corn thoroughly using a sieve. It’s crucial to rinse the corn under running water to remove excess liquid and then pat it dry with paper towels to remove as much moisture as possible. Once drained and dried, place the corn on a cutting board and roughly chop it with a knife. Avoid mincing it too finely; leaving some corn kernels whole or partially chopped will give the fritters a pleasant texture.
Step 3
Add the roughly chopped corn, minced green onion, and carrot to the bowl with the beaten egg mixture. Season with 2-3 pinches of salt and 1/2 tablespoon of cooking wine (like mirin or sake) to enhance the flavor and eliminate any potential ‘eggy’ smell. Stir everything together until well combined. The batter should be slightly thick but hold together well around the corn kernels.
Step 4
Here’s a pro-tip for customization! Feel free to add finely chopped leftover vegetables, ham, or cheese to the batter for extra flavor and texture. Mushrooms or zucchini also make great additions for a more substantial fritter.
Step 5
Heat a skillet over medium-low heat and add a generous amount of cooking oil. Spoon portions of the corn batter into the hot oil, shaping them into small, round fritters. Fry for about 3-4 minutes per side, until golden brown and crispy around the edges. Once cooked, transfer the fritters to a paper towel-lined plate to drain excess oil, which helps maintain their crispiness. And voilà! Your super simple and delicious corn fritters are ready to enjoy!
