How to Make a Super Simple Cheesy Corn Pancake at Home!
Staring into your fridge and only seeing a can of corn and some cheese? No worries! I made this cheesy corn pancake and it was so simple and delicious, I just had to share. With minimal ingredients and an easy recipe, let’s all make this cheesy corn pancake together, hehe π π
Cheesy Corn Pancake Batter- Canned corn, drained: 5 Tbsp
- String cheese or Mozzarella cheese, 1 piece (shredded or cut)
- Oligosaccharide (or corn syrup/honey): 0.5 Tbsp (adjust to taste)
- All-purpose flour: 1 Tbsp
- Water: 2 Tbsp
- Dried parsley, a pinch (optional)
- Olive oil or vegetable oil: 1 Tbsp (for cooking)
Cooking Instructions
Step 1
In a medium bowl, combine the drained canned corn, the shredded or cut cheese, and the oligosaccharide. Mix well. Gently break up any clumps of cheese to ensure even distribution.
Step 2
To the corn and cheese mixture, add 1 Tbsp of all-purpose flour and 2 Tbsp of water. Stir until you achieve a thick batter consistency, where the corn kernels are well-bound. If using, add the pinch of dried parsley and mix lightly. If the batter seems too stiff, add a tiny bit more water, a teaspoon at a time, until it reaches your desired consistency.
Step 3
Heat 1 Tbsp of oil in a non-stick pan over medium-low heat. Ladle a portion of the batter into the pan, spreading it into a round, flat pancake shape. Cook for about 3-4 minutes per side, until golden brown and crispy, and the cheese is melted and gooey. Once beautifully browned, your delicious cheesy corn pancake is ready to enjoy! Serve immediately while warm. π
