Main Ingredients

  • 1 bowl of cooked rice (prepare it warm)
  • 1 cup of well-fermented kimchi (chopped into bite-sized pieces)
  • 2 sausages or ham slices (thinly sliced)
  • 1/2 cup of green onion (chopped)
  • 1 egg
  • A sprinkle of seaweed flakes (for garnish)

Seasonings & Others

  • 3 Tbsp cooking oil
  • 1/2 Tbsp soy sauce
  • 1/3 Tbsp gochugaru (Korean chili powder, adjust to taste)
  • 1/3 Tbsp sugar
  • 1 Tbsp sesame seeds (toasted, more flavorful than whole)

Cooking Instructions

Step 1

First, prepare your ingredients. You can use any of your preferred proteins like sausage, bacon, or ham. I’ve chosen sausages for this recipe.

Chop the kimchi into bite-sized pieces using scissors. This makes cleanup easier and helps the seasoning distribute evenly when stir-frying.

Thinly slice the sausages. Cut the green onion in half lengthwise, then chop them. If you’re using frozen green onions, you can chop them into rounds.

Heat a pan over medium-low heat, add the chopped green onions and 3 tablespoons of cooking oil. Sauté until the green onions become fragrant.

Once the green onions are fragrant, add the thinly sliced sausages and stir-fry until they turn golden brown. The rendered fat from the sausages will add extra flavor.

When the sausages start to brown, add 1/3 Tbsp of sugar and let it caramelize slightly by pressing it against the pan. Once you smell the sweetness, add 1/2 Tbsp of soy sauce and stir-fry together. Be careful not to burn the soy sauce.

Stir in the chopped kimchi, being careful not to let the seasonings stick to the pan. Sauté over low heat until the kimchi softens. If the seasoning clumps together, you can add a tiny bit of water to help loosen it up. My kimchi was well-fermented, so I didn’t need to add extra water.

Once the kimchi is nicely stir-fried, add the warm bowl of cooked rice. Turn off the heat and use a spatula to break up the rice and mix it with the kimchi and seasonings. Once the rice is evenly combined, turn the heat back on and stir-fry until the rice grains are separate and slightly crispy.

For an extra nutty flavor, add 1 Tbsp of ground sesame seeds. Ground sesame seeds are more fragrant than whole ones. Towards the end of cooking the fried rice, also prepare a sunny-side-up fried egg.

Now, it’s complete! Transfer the delicious kimchi fried rice to a nice plate. Top it with the sunny-side-up fried egg. Finally, sprinkle with seaweed flakes and sesame seeds for a visually appealing and incredibly tasty dish.

Break the runny yolk of the sunny-side-up egg and gently mix it into the warm kimchi fried rice. The creamy yolk will enhance the flavors, making it even more delicious. It’s truly heavenly!
